HEALTHY ZUCCHINI BREAD RECIPE
1 3/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup coconut flakes
1/4 cup coconut sugar
2 eggs
1/4 cup unsweetened almond milk
1/3 cup melted coconut oil
1 teaspoon vanilla extract
1.5 cup shredded zucchini, (1 large or 2 small zucchini)
1/2 cup chopped walnuts
INSTRUCTIONS
Preheat oven to 350 Fahrenheit.
Grease a 9-inch loaf pan with cooking spray, coconut oil, butter.
In a medium bowl, combine eggs, coconut oil, unsweetened almond milk, and vanilla extract. Whisk together and put it aside.
In a large bowl, combine white whole wheat flour, baking soda, salt, cinnamon, nutmeg, and coconut flakes.
then pour the wet ingredients into the dry and stir until everything is just combined and you have a nice thick batter.
Add the zucchini and walnuts to the batter and mix until evenly distributed.
Pour batter into prepared loaf pan and top with extra walnuts mix with 1/4 cup of coconut sugar (if desired!).
Bake for 50 minutes or until set through and a toothpick comes out clean. Cool and enjoy!

Recipe:
1 Cup Shredded Zucchini (1 medium zucchini)
1 Egg
½ Cup Peanut Butter
½ Cup Maple Syrup
1 Tsp Vanilla
½ Cup Milk
1 ½ Cup Flour
¼ Tsp Salt
1 Tsp Baking Soda
Optional: ⅓ Cup Chocolate Chips
Step 1
Preheat oven to 350 degrees F. Line an 8x4 inch baking pan with parchment paper and/or spray with nonstick cooking spray.
Step 2
Shred your zucchini and squeeze your shredded zucchini of any excess moisture with a paper towel or cheesecloth. Then place the shredded zucchini in a large bowl. Mix in the egg, peanut butter, maple syrup, vanilla extract, and milk until well combined.
Step 3
Next add in the flour, baking soda, and salt. Mix until well it is well combined. Optional: Fold in the chocolate chips for extra sweetness!
Step 4
Pour the combined mixture into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick/knife, inserted into the middle, comes out clean or with just a few crumbs.
Step 5
Before removing the bread from the pan let it cool for 10-15 minutes.
Step 6
Once the bread has cooled, it should come out of the pan cleanly. Now go ahead and cut yourself a piece, enjoy!

The Best Keto Friendly Zucchini Bread / Eve Keeps You In The Know
This video is to show you how to make Keto-friendly zucchini bread. The bread is nutritious as it is made with health-friendly ingredients that include almond flour, rolled oats, coconut milk, coconut oil, walnuts, dried cranberries and lots of freshly grated zucchini. As you know rolled oats are gluten-free, whole grain and healthy. I use coconut oil and coconut milk for the medium-chain triglycerides, the fatty acids that help increase good cholesterol and decrease bad LDL in the body. Coconut oil also helps people with dementia and Alzheimer’s disease by enhancing brain energy.
Almonds are a good source of Vitamin E, also rich in protein and high in fiber. Zucchini is rich in antioxidants, lutein, zeaxanthin, Vitamin K and magnesium. With dried cranberry and walnuts mixed in the recipe, the bread is highly nutritious and very healthy for the whole family to enjoy.

Recipe and Directions
1 ½ Cups Grated Zucchini ½ cup Almond
½ Cup Dried Cranberry 1 cup Almond Flour
1 cup Rolled Oats Flour 1 tsp Baking Powder
1 Tsp Cinnamon Powder ½ Tsp Sea Salt or Himalayan
½ Cup Brown Sugar, Coconut Sugar 3 Eggs
1/3 Cup Coconut Oil 1 Tsp Vanilla Extract
¼ Cups Coconut Milk (Or your preferred Kind of Milk)
Pulverize 1 cup of Rolled Oats in a blender to turn it into flour.
Combine all the dry ingredients together. 1 cup almond powder, 1 cup rolled oats, ½ a cup brown sugar, ½ tsp sea salt (I like using sea salt or Himalayan for their natural minerals) 1 tsp baking powder, 1 Tsp Cinnamon Powder, Mix well. Set aside.
In a separate bowl, combine all of the wet ingredients. Toss in 3 eggs, 1/3 Cup coconut oil, 1 tsp Vanilla Extract, and ¼ Cup Coconut Milk. Toss in the flour mixture, and stir well. Toss in the zucchini and mix well. Add the walnuts and dried cranberry. Mix well. Pour into the greased pan. Add a few walnuts on top to make it look so good. Grease the loaf pan with coconut oil. Bake at 350 degrees.
