How To make Farmer's Pork Chops
4 loin pork chops, 1/2-3/4-inch thick
chopped garlic salt and pepper, to taste 4 medium potatoes
peeled and sliced
2 large onions :
sliced
1 1/2 cups sour cream
1/2 teaspoon dry mustard
Coat chops with flour. Brown with garlic in 2 tablespoons oil. Season with salt and pepper. Place potatoes in the bottom of baking dish large enough to hold chops without crowding. Place chops on top. Separate onion slices into rings; place over chops. Combine sour cream and dry mustard, pour over all. Cover pan with foil and bake at 350F for 1 1/2 hours. Remove foil from pan and bake a little longer until top is nicely browned.

Preheat oven to 325F
Season pork chops and 2 Tablespoons of flour with salt and pepper.
Add 2 Tablespoons oil to hot pan on a medium flame.
Dredge pork chops in seasoned flour and knock off excess. Add pork chops to hot oil. Brown both sides and place on an oven safe plate. Put into preheated oven.
Add 4 or 5 sage leaves and on clove of sliced garlic to pan. When the garlic starts to get some color remove garlic and sage. Add 1/4 of a medium sliced onion and cook onion until slightly brown. Add 1/4 cup chicken stock and season with salt and pepper. When the stock has reduced 50% add 2 Tablespoons of butter and swirl to combine butter.

The key is to use a meat thermometer and cook your pork to 145 degrees F, which will still have a blush of pink in the center. Properly cooked pork chops are hard to beat on a long holiday weekend.
Parmesan Crusted New York Pork Chops Recipe
4 boneless New York (top loin) pork chops, about 1-inch thick
1 Tablespoon olive oil
1 1/2 teaspoons coarse salt
1 teaspoon black pepper, freshly ground
1/3 cup panko bread crumbs, (Japanese-style bread crumbs)
1/3 cup Parmesan cheese, freshly grated
Brush pork with oil (or coat with cooking spray). Season with salt and pepper. Let stand for 15 to 30 minutes (Getting pork closer to room temperature will help prevent it from sticking to the grill. Food safety is critical). In a small bowl, mix panko and Parmesan together.
Prepare a medium-hot fire in grill. Place chops on grill and close the lid. Grill over direct heat for 4 minutes. Turn chops and sprinkle panko mixture over tops. Close lid and continue grilling for 4-5 minutes more, or until the topping is lightly browned and the internal temperature of the pork on a meat thermometer measures between 145 degrees Fahrenheit (medium rare) and 160 degrees Fahrenheit (medium). Remove from the grill and let rest for 3 minutes.
