How To make Fat Free Pineapple Upside Down Cake (Ovo Lact
Nonstick cooking spray 1/3 c Brown sugar; packed
2 tb Light corn syrup (karo)
1 tb Lemon juice
7 Canned pineapple rings; drai
1 c Flour
1/4 c Cornstarch
1 1/2 ts Baking powder
1/2 ts Salt
1 c Sugar
2/3 c Skim milk
2 Egg whites
1/3 c Light corn syrup (karo)
1 ts Vanilla
Spray 9-inch cake pan with cooking spray. Add brown sugar, corn syrup and lemon juice; stir to combine. Place in 350 F oven 3 minutes. Arrange pineapple rings and cherries in pan; set aside. In large bowl, combine flour, corn starch, baking powder and salt. In medium bowl, stir sugar and milk until sugar is almost dissolved. Add egg whites, corn syrup and vanilla; stir until blended. Gradually add to flour mixture, stirring until smooth. Pour into pan. Bake in 350 F oven 35 to 40 minutes or until toothpick inserted in center comes out clean. Immediately loosen edge of cake with spatula and invert onto serving plate. Remove pan. Each serving provides: 200 Calories, : D/L from Prodigy 12-14-94. Recipe collection of Sue Smith. 1.80?

(15-30g) toasted pecan halves
1 ½ tablespoons Lakanto golden sweetener
pinch of cinnamon powder
1 tablespoon (15g) salted butter
1 ½ tablespoons (11g) coconut flour or ¼ cup (25g) blanched almond flour
1-2 tablespoons (13-25g) Lakanto golden sweetener
½ teaspoon (2g) baking powder
2 tablespoons (30g) melted salted butter
1 large egg
¼ teaspoon (1mL) vanilla extract
-Microwave for 60-90 seconds.
-Or bake at 350°F (177°C) for 15-20 minutes until toothpick is clean when inserted.

Pineapple Walnut Cake (in a skillet?!) from Cupid's Book 1929
In 1929, Cupid's Book was a recipe and household hint pamphlet that you would gift to a new bride. It was a fun read to see what was recommended to new couples during the last year of the roaring 20s! It was also quite the adventure to get this cake out of my skillet!! I've never made a cake in a skillet but I enjoyed the process and the ease of cleanup. So, grab a pan and let's get to baking!
What you'll need:
2 T Butter
1 c Brown Sugar
3/4 c Walnuts
4 slices canned Pineapple
Melt butter in skillet. Remove from heat and add sugar, nuts and pineapple. Pour cake batter on top and bake in a 325 degree oven for 30 minutes. Turn out onto plate so that nuts and pineapple are on top.
For cake batter:
1 1/2 c Pastry Flour
1/2 c Sugar
2 1/2 tsp Baking Powder
1 Egg
1/2 c Milk
4 T fat- I used butter
1/2 tsp Vanilla
Mix dry ingredients, add beaten egg, milk, fat and vanilla.
