How To make Festive Lebkuchen
3 tb Butter or margarine
1 c Packed brown sugar
1/4 c Honey
1 Egg
Grated peel and juice of 1 -lemon 3 c All-purpose flour
2 ts Ground allspice
1/2 ts Baking soda
1/2 ts Salt
White decorators frosting Recipe by: COUNtrY CHRISTMAS RECIPES Melt butter with brown sugar and honey in medium saucepan over low heat, stirring constantly. Pour into large bowl. Cool 30 min. Add egg, lemon peel and juice; beat 2 minutes with electric mixer on high speed. Stir in flour, allspice, baking soda and salt until well blended. Cover; refrigerate overnight or up to 3 days. Preheat oven to 350 degrees. Grease cookie sheet. Roll out dough to 1/2" thickness on lightly floured surface with lightly floured rolling pin.
Cut with 3" cookie cutter. Transfer to prepared cookie sheet. Bake 15-18 minutes until edges are light brown. Cool 1 minute. Remove to wire rack; cool completely. Decorate with white frosting. Store in airtight container. -----

Lebkuchen are Christmas Cookies that originated in Germany. They are pretty close to gingerbread, being flavoured with spices, but are softer and puffier.
Lebkuchen are often cut into small shapes and have dark chocolate on the base and a thin crispy sugar shell on the outside.
But Lebkuchen can also rolled and cut into large hearts and decorated with royal icing.
If you visit Christmas markets around Europe there’s typically an entire stall dedicated to gingerbread and Lebkuchen.
For my own spin I cut my Lebkuchen into Christmas trees, which I coated with chocolate on top rather than underneath. I added festive-coloured sprinkles as the Christmas tree baubles.
This Lebkuchen cookie recipe is spiced with ginger, cinnamon, cardamom and cloves. It’s very similar to gingerbread, except a little softer.
The only thing I couldn’t achieve was the puffy texture of the real authentic Lebkuchen cookies I tried in Strasbourg.
Possibly I rolled the dough way too thin, so maybe try thicker cookies if you want them softer. They still taste wonderful and make great gifts for Christmas.
