1/4 cup butter, cubed
1 small onion, chopped
2 to 3 jalapeno peppers, seeded and chopped or 1/2 green pepper seeded and chopped
6 plum tomatoes, seeded and chopped
2 1/2 cups or 10 oz fresh or frozen corn
salt to taste ( I also seasoned with 1 1/2 tsps Salad Supreme by McCormick)
Lime wedges, optional
Directions
In a 6-qt. stockpot, heat butter over medium heat. Add onion and jalapenos or green pepper; cook and stir until onion is crisp-tender, 3-4 minutes. Stir in tomatoes, add corn and season. Cook, uncovered, until tender, stirring occasionally, 8-10 minutes. Stir in salt. If desired, serve with lime wedges.
I am not a chef just a home cook. I will be making simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make from other channels and online sites and will make it and give it a try.
John 3:16 - For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life.
If you have a YouTube channel and make any of my recipes especially those I say are family recipes I ask you to tell where you got the recipe from and not pass it off as your own. I always give shoutouts if I try a recipe from another YouTube channel..it is only right to do so.
I DO NOT SUB FOR A SUB SO DO NOT ASK. ANY COMMENTS LIKE THAT WILL BE DELETED AND BLOCKED.

STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top
Vegan freaks out when he realizes he just ate cheese
Vegans don't just not eat meat, they don't consume anything that comes from an animal in any way at all. This footage of a vegan vlogger realizing he just ate some cheese shows how seriously Vegans take their lifestyle.
