How To Make Easy Swedish Dream Cookies ????Drömmar
In the 1800's, creating a cookie plate of 7 or more “småkakor” (little cookies) was traditional to serve to your guests. The Swedish Dream cookie Drömmar was one of the cookies to make. Dream cookies are still very popular in Sweden.
There are all sorts of Dream cookie recipes to try. A typical Swedish Dream Cookie is airy, melt in your mouth and made with ammonium carbonate. It can be difficult to find ammonium carbonate in some places and needs to be ordered online. A substitution ingredient for the cookie is to use baking powder.
Here our dream cookie recipe has easy to find ingredients with a lemon twist. ????. As well we used the baking powder because ammonium carbonate is not easy to find where we live. This Dream cookie has a buttery taste and is similar to a short bread cookie. In the future, we hope to make several other Dream Cookie versions such as with chocolate, coconut and baker’s ammonium too. We hope you like this simple version!

Scandinavian Rosette Cookies A traditional homemade Christmas cookie recipe for Jul! ♥
It's not Christmas (Jul) without both making and eating the traditional Rosette cookies. YUM! These Scandinavian cookies are delicious, deep-fried, and melt in your mouth.
Some people like to sugar the bottoms and other people sugar the tops. If you flip it upside down, it looks a little fancier and sugar these that way. The sugar catches the sides and it gives the cookies a bit more contrast. If you sugar the top of the rosette cookies, it looks like a touch of snow. However, either way the rosettes will still taste great! Which way do you usually serve the rosettes with sugar on the top or bottom?
Scandinavian Rosette Cookies Recipe
♥ Ingredients ♥
•1 cup milk
•1 tsp sugar
•1/8 tsp salt
•1 tsp vanilla (or almond extract)
•2 eggs
•1 cup flour
•vegetable oil for frying
•sifted confectioners' sugar to sprinkle
A few flavoring ideas:
•Substitute lemon extract or vanilla sugaring
Kitchen Utensils
•rosette iron star- or flower-shaped
•measuring cups and spoons
•large mixing bowl
•whisk
•thermometer
Instruction:
1.Combine milk, eggs, sugar and salt vanilla extract; beat well. Add flour and beat until smooth.
2.Heat a rosette iron in deep, hot oil (375 degrees) for approx. 2 minutes.
3. Drain excess oil from iron. Dip in batter to 1/4 inch from the top of the iron, then dip iron into hot oil (approx. 375F degrees).
4.Fry rosette until golden, approx. 30 seconds. Lift out; tip upside down to drain. With fork, push rosette off iron onto a paper towel.
5.Reheat iron 1 minute; make next rosette.
When you are ready to serve these cookies, sprinkle the rosettes with confectionary sugar (optional cinnamon sugar or sugar) and jam on the side. You might want to use a sifter if you use confectionary sugar to avoid clumps of confectionery sugar plopping onto the cookies. Instead if you use a sifter, it will look more smoother. Also if you sprinkle the confectionary sugar too early, these cookies will get soggy. So you it is best to sprinkle the sugar just before serving

Ingredients:
230 g, 1 cup of butter, 2 sticks - room temperature
250 g of cream cheese - room temperature
2 cups all purpose flour
1 /2 teaspoon salt
1/3 cup of poppy filling
1/3 cup of plum butter
icing sugar for rolling and serving
Instructions:
In a large mixing bowl, cream together the butter and cream cheese. Mix until smooth.
Mix flour and salt together.
Gradually add in the flour, sifting, beat until a soft dough forms.
Separate dough into 4 balls and wrap each in saran wrap. Refrigerate for 24 hrs.
Preheat your oven to 180 degrees C or 350 degrees F.
Roll out the dough on a surface lightly dusted with powdered sugar until about 1/4-inch thick. Work in small batches, keeping the rest of dough in the fridge. If the dough gets too sticky as you are working with it, place it back in the fridge.
Cut the dough into more or less 6 cm or two-inch squares.
Place about a teaspoon of the plum butter or poppy seed filling in the center of each dough square. Bring two opposite corners of the dough together over the filling to form a roll. Pinch the corners together. You can also place a tsp of filling on a corner of a square and roll it up like a crescent roll.
Place the cookies on ungreased cookie sheets.
Bake for 10 to 12 minutes or until lightly browned. Dust with powdered sugar while warm.
Allow to cool completely on a wire rack.
Enjoy!
