Salmon en Croute | Salmon in Pastry
Salmon en Croute - salmon in a pastry crust is amazingly easy to make and makes a very impressive centrepiece for a meal. Usually, the filling is two decent-sized fillets of salmon sandwiching and a creamy, cheesy spinach filling. This is wrapped in flaky or puff pastry.

Episode 12: Flaky, Moist Steamed Fish & Vegetables - Fish en Papillote
Ingredients:
4 - 6 oz. fish fillets of your choice (cod, sea bass, shrimp, salmon)
1 cup carrots (slivered)
1/2 stick butter chopped into very small cubes
8 thin lemon slices
1 cup spinach, chopped
4 Tablespoons capers
1/2 cup tomatoes, chopped
2 russet potatoes, peeled and sliced thinly
1 large onion, peeled and sliced thinly
1/2 red bell pepper - sliced thinly
1/2 fennel - sliced thinly
Seasonings
1 teaspoons salt
1 teaspoon pepper
1 Tablespoon granulated garlic powder
1 Tablespoon lemon pepper
1 Tablespoon smoked paprika
Mix the seasonings above in a bowl to be used for the vegetables and fish.
Parchment Paper - cut 14 inches of parchment paper, fold and cut into the shape of a heart. (See video)
Directions:
1. Preheat the oven to 375 degrees.
2. Cut a half stick of butter into tiny cubes and place in the freezer until ready to assemble the fish packets.
3. Season fish fillets with the seasoning mix.
4. Prepare all of the vegetables and set aside in small bowls.
5. Cut parchment paper into large hearts.
6. Layer vegetables and seasoned fish in this order on the parchment paper: sliced potatoes, chopped spinach and tomatoes.
7. Stop and season the vegetables and add a few cubes of butter.
8. Continue layering the vegetables by adding the sliced onions, fennel, carrots, bell peppers and capers.
9. Stop and season the vegetables again and add a few cubes of butter.
10. Place the seasoned fish on top of the vegetables.
11. Top the fish with two lemon slices and place a few butter cubes on top of the fish also.
12. Wrap the fish packets. Follow directions in the video.
13. Should you tare the parchment paper just place the one you are using on top of another heart shaped parchment paper. It’s okay to double the paper.
14. Bake for 30 minutes (make sure the oven is heated to 375 degrees) or until you see parchment paper start to brown.
15. Remove the fish packets from oven and serve hot.
16. Enjoy!

Ingredients:
puff pastry - 600 g (21.16 oz)
cheese cream - 300 g (10.6 oz)
garlic - 2 cloves
feta cheese - 200 g (7 oz)
pressed cheese - 100 g (3.5 oz)
parsley - 20 g (0.7 oz)
eggs - 1 piece
pressed cheese - 50 g (1.76 oz)
Tray size 30 X 40 cm (12 x 16 in)
IN THE OVEN 180 °C (356 °F) /25 minutes
for the sauce:
yolks - 4 pieces
melted butter - 100 g (3.5 oz)
lemon juice - 20 ml (0.7 fl oz)
milk - 50 ml (⅕ cup)
OVER LOW FIRE 2 minutes
spicy paprika - 2 g (0.07 oz)
