How To make Flounder Au Gratin
1 tb Margarine
4 Green Onons Cut Into 1/2
Inch Pieces 2 tb Diced Celery
2 ts Flour
1/8 ts Salt
1/8 ts White Pepper
1/2 c Skim Milk
1/4 c (1 Oz.) Shredded Swiss
Cheese 1 (16 Oz.) Package Frozen
Flounder, Thawed & Drained 1 tb Minced Fresh Parsley
Melt Margarine in A Small Saucepan Over Low Heat. Add Onions & Celery; Saute Until Tender. Stir in Flour, Sat & Pepper; Cook 1 Min. Stirring Constantly. Gradually Add Milk; Stir Well. Cook Over Medium Heat Until Thickened & Bubbly, Stirring Constantly. Add Shredded Swiss Cheese; Reduce Heat & Cook Until Cheese Melts, Stirring Constantly. Set Aside. Arrange Fillets in A Single Layer in A 10 X 6 X 2 Inch Baking Dish Coated With Cooking Spray. Pour Cheese Mixture Evenly Over Fillets. Cover & Bake At 350 For 25 Min. OR Until Fillets Flake Easily When Tested With A Fork. Sprinkle With Parsley. Fat 6. Cho. 64.

This can be made with shrimp, crawfish or lobster, Recipe:
INGREDIENTS
1 lb white crab meat (I used Dungeness)
2 egg yolk, beaten
3 tblsp flour
1 stick butter
1 cup chopped onion
1/2 cup chopped celery
1 13oz can of pet milk
1/2 cup american cheese
1/2 cup swiss cheese
red pepper to taste (I used Cajun season all)
PROCEDURE
Melt butter, add flour, stir until blended well.
Add onion and celery, cook on low fire until onions are tender.
Add pet milk and egg yolks. Stir well until blended.
Add cheeses, salt and red pepper and cook on low until cheeses are melted.
Stir in crab meat, cook low about five minutes.
Pour into individual microwave dishes.
Heat on high until bubbily.
Top with slices of American cheese.
Return to microwave until cheese is melted on top.

Crab Imperial, Chef Frank shows you how to make this old school Maryland classic.
INGREDIENTS....makes 3 servings
1lb. Blue crabmeat
1 1/2 cups mayo
1 tsp celery salt
2 tbsp fresh lemon juice
1 1/2 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1/2 tsp black pepper
2 tbsp minced fresh parsley
Recipe
1. Drain crabmeat but gently squeezing out all excess liquid.
2. In large bowl combine mayo, celery salt, mustard, Worcestershire sauce, black pepper.
3. Place crabmeat and parsley in a separate large bowl.
4. Start by adding 2/3 cup imperial mix to crab and parsley. Add enough imperial mix to coat the crabmeat. This mixture should be wet but not soupy.
5. Put crab imperial in casserole dish. DO NOT pack tightly.
6. Cover your crab imperial with moderate layer of the remaining imperial sauce.
7. Sprinkle with paprika.
8. Bake at 400 for 12 minutes or until golden brown.

Easy baked flounder or any white fish fillet will work. Serve with vegetables and rice.
Recipe:
Preheat oven at 425°f
Flounder fillet - 4pcs
( pat dry then season the fish with salt & blackpepper)
Butter (melted) - 2 tbsp
Breadcrumbs or Panko - 1/4 cup
Italian seasoning - 1 tsp
Olive oil - 1 tbsp
Parmesan cheese - 6 tbsp
Mix the 5 ingredients and spread the mixture over the fillet.
Bake at 425° for 10-12 mins and broil for 2 mins
