How To make Fourth Of July Cheesecake
3 c Vanilla wafer crumbs
4 tb Margarine, melted
3 tb NutraSweet Spoonful
1 Envelope (1/4ounce)
Unflavored gelatin 1 c Skim milk
2 pk (8 ounces each) reduced fat
Cream cheese, softened 1 pk (3 ounces) reduced fat cream
Cheese, softened 2 tb Lemon juice
1 tb Grated lemon rind
2 ts Vanilla
1/3 To 1/2 cup NutraSweet
Spoonful 1 pt Blueberries
2 pt Raspberries
MIX CRUMBS, margarine and 3 tablespoons NutraSweet Spoonful in medium bowl; pat evenly on bottom of jelly roll pan, 15 x 10 inches. SPRINKLE GELATIN over milk in small saucepan; let stand 2 to 3 minutes. Heat over medium low heat, stirring constantly, until gelatin is dissolved. Cool to room temperature. BEAT CREAM CHEESE until fluffy in large bowl; gradually beat in milk mixture. Beat in lemon juice and rind, vanilla and 1/3 to 1/2, cup NutraSweet Spoonful. Pour mixture over crust; refriger- ate until set, 3 to 4 hours. BEFORE SERVING, decorate to look like a flag, using the

Yummy red, white and blue cheesecake for your 4th of July celebration!
Leave the crust plain and this would still be a very good, no-bake cheesecake.
I recommend doubling the ingredients for a 9 springform pan, I found it a bit on the thin side. (double for white and red layer, only 1.5x for the crust)

Crust ingredients:
30 nilla wafers (or any plain cookie) crushed
3 tbsp blue sugar (or white sugar)
4 tbsp melted butter
blue food colouring
Filling:
8 oz cream cheese at room temperature
1/4 cup white granulated sugar
1/2 tsp vanilla
1 cup whipping cream (35%)
Topping:
1 tbsp gelatin powder
1/3 cup water
2 1/2 cups fresh or frozen raspberries
1/2 cup sugar
1 1/2 tsp fresh lemon juice
******NOTE******* I forgot to mention the lemon juice in the video but I did add it.
Additional raspberries and whipped cream for garnishing.
Process the cookies until fine crumbs add the blue sugar, melted butter and few drops of blue food colour and stir or re-process until blended and the desired shade of blue.
Press the crumb mixture into the bottom of an 8 spring form pan.
Blend the cream cheese, sugar and vanilla extract together until creamy and smooth.
Beat the whipping cream in a separate bowl until thick and with stiff peaks.
Blend the whipped cream into the cream cheese mixture until well combined.
Spoon over the blue crust layer.
Topping:
Sprinkle gelatin over water in a small bowl and allow to sit while you prepare the rest of the recipe.
Place raspberries and sugar in a medium saucepan and heat over medium high heat until boiling.
Remove from the heat and strain in a sieve to remove seeds and pulp.
Stir in gelatin/water mixture and stir well.
Add lemon juice and stir mixture over an ice water bath until cool and slightly thickened.
Pour over cream cheese layer and refrigerate several hours or overnight until firm.

The 4th of July is just in a couple days so we thought we'd bring a you a simple dessert that is not only delicious, but travels well too for those of you going to a party. Make sure to try out our Simple Mason Jar Cheesecakes!

RECIPE
Graham Cracker Crust
1 1/2 cups graham cracker crumbs
1/4 cup butter; melted
1/4 cup sugar
Cheesecake
1/2 cup granulated sugar
zest of one lemon
2 packages cream cheese, 8 oz each; room temperature
2 large eggs; room temperature
1⁄4 cup heavy cream
1 1⁄2 teaspoons pure vanilla extract
Garnish
1 cup berries of your choice
STEPS
Preheat oven to 350 degrees F; boil a large pot of water for the water bath.
Mix graham cracker crumbs, melted butter, and sugar together in a bowl. Press the graham cracker mixture into the bottom of each jar with a muddler or the backside of wooden spoon.
In the bowl of your stand mixer fitted with your paddle attachment, combine the sugar and lemon zest and mix until the sugar is fragrant (Building Flavor!). Add in the cream cheese and paddle together until smooth. (You can also use a hand mixer)
Add eggs, one at a time, fully incorporating each before adding the next. Make sure to scrape down the bowl in between each egg. Add heavy cream and vanilla and mix until smooth.
Pour/Scoop/Pipe batter into jars until about 3⁄4 of the way full. Place jars into a larger pan and pour boiling water into the larger pan until halfway up the sides of the jars.
Bake 20 to 30 minutes (depending on the size of jars), the edges will appear to be set, but the center will still have a little jiggle to it.
Carefully remove the cheesecake jars from the water bath and place on a cooling rack to cool completely. Once the cheesecakes are completely cooled, place them into the refrigerator for at least 5 hours.
Top will fresh berries and serve.

With a super simple recipe, crushed Oreo and regular cream cheese, these bars a hit! Ready in under an hour with little to no mess and most ingredients you will already have at home. Serve up room temperature or chilled, whatever your preference they will not disappoint. Try them out for your 4th of July party this year!
