How To make Fresh Fig Muffins

2 large Fresh figs :
finely chopped
2 cups Flour
2 tablespoons Flour
1/3 cup Sugar
1 tablespoon Baking powder
1/2 teaspoon Salt
1 cup Milk
1 Egg beaten
1/4 cup Butter or margarine :
melted
Dredge figs in 2 tbls flour, tossing lightly to coat; set aside. Combine remaining flour, baking powder and salt in a medium bowl; sift together 4 times. Stir together milk, eggs and butter; add to dry ingredients, stirring until moistened. Fold in reserved figs. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 450~ for 20 minutes or until golden brown. Remove from pans. Serve warm.

Homemade Fresh Fig Newtons
Ingredients:
For the fresh figs preserves
500 g fresh figs, cut into quaters or chunks
250 g sugar
1 Lemon juice and zest
1 tsp vanilla extract
Add all the ingredients into a pot and cook to a medium heat, cook until preserves have reduced in half for at least 1hr, stirring constantly to avoid the jam to burn the bottom, let cool completely and tranfer to a piping bag, set aside.
For the Cake-y Cookie dough
300 g all purpose flour
140 g butter
70 g sugar
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
1/2 tsp cinnamon
2 Tbsp honey
1 Tbsp milk
3 large eggyolks
Whisk together the flour, salt,cinnamon,and baking powder, set aside.
Place butter and sugar in a mixing bowl, beat until fluffy,, add honey, milk and vanilla until well combined.
Add the yolk one at a time , alternate with flour mixture, do not over mix as the the cookie would lose the cakey-ness.
Bring the dough together and flatten into a disc.wrap in plastic and refrigerate for 1 hour., this makes the dough makes easier to work with.
Assembling the cookies:
Preheat oven to 350 degrees F.
Cut the dough into 3 equal parts.take the 1/3 dough and lightly knead the dough so it is a nit softer and pliable.
Place a sheet of wax paperl and rollnout the soft dough into square.
Trim off the edge, pipe a finger thick strips.
With the help of your wax paper fold dough over the preserves.
Tranfer the logs onto a cookie sheets and flatten it out with your fingers.
Bake for approximately 18 minutes or lightly golden.
Cut the freshly baked bars in 5cm
Note:
when fresh out of the oven, the cookies are still crispy, you shoul allow the cookies to relax overnight.
The figs preserves will soften the crispy cookies and they will have the soft cake like texture we all love.

Fiddler Dave’s Fig Muffins Recipe
1 1/2 c. salad oil
2 1/4 c. sugar
3 eggs
2 tsp. soda
3 c. flour
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1 tsp. cinnamon
1 tsp. salt
3/4 c. buttermilk
1 tsp. vanilla
1 c. preserved figs chopped
Beat 3 eggs; add sugar and oil. After mixing the rest of the dry ingredients with a whisk, add to egg mixture alternately with buttermilk. Add vanilla and fold in figs. Pour into muffin tins, sprinkle top with course sugar and bake at 350 degrees for 35-40 minutes until tops are brown.

How to make a Fresh Figs Cake
If you look for a fig cake recipe, just make this fresh fig cake and enjoy it!
It's lovely for dessert, mid-afternoon snack, or even breakfast.
RECIPE:
Ingredients:
3 eggs
1/4 cup stevia
100 ml almond milk
1 tbsp honey
pinch of salt
vanilla extract
40 gr almond flour
40 gr coconut flour
6 figs
handful of almonds flakes
Preheat the oven to 170C | 340 degrees F and grease a baking tray and sprinkle with flour.
In a bowl, beat the eggs, stevia, salt, milk, honey, vanilla extract and flour together.
Spoon the batter into the prepared dish. Add the figs to the batter and sprinkle with sliced almonds.
Bake for 30 - 40 minutes.
