How To make Fruity Yogurt Cheesecake
64 ounces low-fat vanilla yogurt
1 cup confectioners' sugar
crust:
3/4 cup graham cracker crumbs
2 tablespoons butter or margarine melted
1 tablespoon granulated sugar
:
topping 2 ripe peaches :
sliced thin
2 tablespoons apricot preserves
1/2 pint fresh raspberries
1. Line a large strainer with 3 layers of white paper towels. Place
strainer over a large bowl. Scrape yogurt into strainer. Cover and refrigerate at lea st 24 hours. Yogurt will become very thick.
2. Mix crust ingredients in a bowl. Press evenly over bottom of an
ungreased 8 or 9 inch springform pan. Cover and refrigerate until firm, at least 1
hour .
3. Mix drained yogurt and confectioners' sugar in a bowl. Spoon into
chilled crust. Smooth surface with a rubber spatula. Cover and chill at least 2 hour s, overnight if possible.
4. Run a knife between cheesecake and pan sides to loosen. Remove pan
sides. Leave cheesecake on base.
5. Arrange peach slices on top in a circle around the edge. Melt
preserves a nd brush over peaches. Mound raspberries in the center. Serve soon, or cover and refrigerate up to 1 day. Makes 8 servings.

- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g unsweetened Yogurt ( 7 ounces )
- 150 g Sugar (3/4 cup)
- 2 Eggs
- Grating of Lemon Zest
- 1 tsp Vanilla
- 20 g Flour ( 2 tbsp )
Bake for 15 minutes!
● 5 minute No Bake Mini Cheesecakes:
- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g Heavy Cream ( 7 ounces )
- 100 g Sugar ( 1/2 cup)
- 1 tsp Vanilla
Freeze for 15 minutes, then enjoy :)
● For the cheeesecake crust:
- 80 g Digestive biscuits/graham cracker cookies ( 3 ounces)
- 30 g Melted Butter ( 2 1/2 tbsp)

Hi! In this video I have made a single serving yogurt cheesecake with just 3 easily available ingredients. It is rich, creamy & tasty even without cream cheese. But you can substitute Greek yogurt with cream cheese. For fruit sauce, you can use any seasonal fruit of your choice. I recommend slightly tangy fruits. Although this is a single serving recipe, you can easily make large batch by doubling or tripling the recipe. More details in video..

Ingredients:
For Cheesecake:
Marshmallows (big) - 3 / 18.5g
Milk - 18.5g / 1.25 Tbsp
Cold Greek Yogurt - 37g / 2 Tbsp
For Cherry Puree:
Cherries, chopped - 28g / 3.25Tbsp
Sugar - 4.6g / 1.25 tsp
few drops of lemon juice

3-Ingredient Microwave Cheesecake
3-Ingredient Microwave Cheesecake
Ingredients:
½ - 1 pack Lemon Creams (Depending on the size of your dish)
1 kg plain double cream yogurt
1 can Nestlé Condensed Milk, well shaken before opening
Serving suggestion:
1 cup mixed fresh berries: blue berries and strawberries
Mint leaves
Method:
For the Base:
1. Pop the lemon creams into a zip lock bag, crush using a rolling pin.
2. Grease a medium sized square microwave safe bowl, add the crushed lemon creams. Microwave for 30-45 seconds. Mix the crumbs together well then with the back of a spoon, press the crumb down onto the base of the dish firmly to create your crust.
For the Filling:
1. Mix the yogurt and Nestlé Condensed Milk together in a bowl. Microwave the filling for 2-3 minutes. Remove the bowl, mix rapidly and put back in the microwave for another 2-3 minutes. Pour the mixture over the lemon cream biscuit base and refrigerate for a minimum of 4 hours or overnight for best results.
Serving suggestion:
1. Once the cheesecake has set completely, slice into squares and serve with fresh berries and mint leaves to garnish.
