Crispy Potato Pancakes with Sour Cream
Increase your breakfast pleasure with golden, crispy, fried Potato Pancakes. This recipe is easy to make and delicious.
What are Potato Pancakes?
Potato pancakes are also called latke or draniki. It belongs to European cuisine. It is basically prepared using potatoes, onions, eggs, flour and spices. In Swiss cuisine, eggs and flour are not used in this recipe.
Usually russet potatoes are ideal for this recipe. It ensures that the pancakes are browned evenly and well without absorbing too much oil. Potato pancakes served with applesauce and sour cream are a great choice for breakfast. It can also be served as a side dish.
How To Make Potato Pancakes in the Oven?
Preheat the oven to 400 °F.
In a large bowl, combine potatoes, onion, garlic and eggs.
In a separate bowl, mix the all purpose flour and breadcrumbs. Thanks to these ingredients, pancakes will be fluffy and light.
Then, combine the dry ingredients to wet ingredients. Add salt, black pepper and parmesan cheese. Stir all of them.
Line the parchment paper to the baking sheet. Prepare 8 servings of pancakes from the potato mixture. Make sure the pancakes are thin.
Bake the pancakes for 20-25 minutes until they get golden brown.
Serve it hot with applesauce or sour cream.

2 Yummy Potato Pancake Recipes
Ingredients:
Potato Egg
2 potatoes
1 tbsp ap flour
¾ tsp garlic powder
½ tsp pepper
2 eggs
1 cheese slice
Potato Meat
2 tbsp cooking oil
1 tbsp butter
2 small onion
1 tsp ginger
250-gm ground beef
½ tsp salt
¾ tsp red chili
½ tsp pepper
300-gm boiled potato
1 cup ap flour
¾ tsp salt
Instructions for potato egg pancake:
1. Shred potatoes and wash in cold water
2. Add ap flour, garlic powder, and pepper
3. Salt to taste
4. Spread the potatoes on a flat pan
5. Add whisked egg and cheese
6. Ready to enjoy!
Instructions for potato meat pancake:
1. Melt butter in cooking oil on pan
2. Saute chopped onion until soft
3. Stir in ginger and ground beef
4. Salt to taste
5. Add red chili and pepper
6. Mash potatoes in a clear bowl and add ap flour
7. Salt to taste
8. Roll out dough and place filling then seal
9. Fry in cooking oil on medium-low heat
10. Ready to enjoy!

Indian Street-Food Potato Cakes with Chickpea Chaat
This dish is based on a really popular Indian street-food dish, consisting of crispy potato cakes on a bed of delicious spiced chickpeas, drizzled with a tamarind and date chutni and a herby coriander chutni. The resulting flavours and textures are pure magic; spicy, sweet, savoury, nutty and crispy in every bite! You can buy the tamarind chutni, but below is a recipe for a very quick homemade version. We have also replaced the traditional coriander chutni with a quick herb yoghurt for ease. You can also drizzle over Sriracha or other hot sauce for added chilli!

You’ll need:
• 1 pack of The Spice Tailor Punjabi Chickpea Masala
• Oil to cook
• 400g cooking potatoes
• 3 tbsp. finely chopped red onion - plus 1 tbsp. extra for garnish
• ¼ tsp. cumin powder
• Seasoning
• Pomegranate seeds to garnish
• Mint leaves to garnish
Quick Tamarind Chutni (Store any extra in the freezer):
• 2 tbsp. tamarind paste
• 70g brown sugar
• 3/4 tsp. cumin seeds, dry roasted until fragrant and turning brown, then ground to a powder
• 70ml water
• Salt and black pepper
Herbed Yoghurt Sauce:
• Fistful of fresh coriander, chopped
• 8 good mint leaves, chopped
• 3 tbsp. plain or soya yoghurt
