DUTCH BABY RECIPE | German pancakes
Hello friends! Today we are preparing a very simple, but MAGIC recipe. Dutch baby pancake is an eggy and fluffy popover pancake made in a cast-iron skillet. It's also called the German pancake.
INGREDIENTS:
250ml milk
100g flour
3 large eggs
40g sugar
1/4tsp salt
30g butter
COOKING METHOD:
1. Preheat oven to 400F/200C degrees. Place cast-iron skillets (or any baking dish) in the oven for 10-15 minutes (while preparing the dough).
2. Pour milk into a blender bowl, add flour, eggs, sugar, and salt. Mix.
3. Take the skillets out of the oven (be careful they are very hot) and put the butter in them.
4. When the butter melts, pour the dough to the middle of the mold.
5. Bake at 400F/200C for 20-25 minutes. Until golden color.
6. Serve hot, sprinkled with powdered sugar. Add berries, whipped cream, or ice cream if desired.

This delicious Apple Dutch Baby is a delicious flavor twist on the traditional dutch baby pancake. So good you might feel guilty eating them for breakfast! Also known as a German apple pancake, this is a terrific breakfast and brunch recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. You can shorten the preparation time by using apple pie filling, but the crisp of new apples really takes it to the next level. Don’t let the name fool you, dutch babies contain 0% real baby but 100% deliciousness, add some apples and cinnamon and you’ve got a real treat!

Ingredients for making apple Dutch baby:
1/2 cup whole milk
2 large eggs
1/2 cup all-purpose flour
4 tbsp sugar
1 large apple, peeled, cored, and sliced thinly
1/3 cup brown sugar
1 pinch cinnamon
2 tbsp butter
powdered sugar
Instructions for making apple Dutch baby:
- The batter is super simple, just add milk, eggs, all-purpose flour, white sugar, and kosher salt to a blender and mix for a few seconds until combined
- The consistency should be quite thin like crepe batter
- Grab your favourite kind of apple and slice it very thinly
- Now add white sugar, brown sugar, and cinnamon
- Mix so the apples are fully coated in the sugar mixture
- Now heat a cast iron skillet over medium high heat and add 2 tbsp of butter
- Once the butter is melted, pour in the apples and cook until they’re soft and the sugar has caramelized
- Remove from the heat then pour the batter evenly over the apples
- Now immediately put the pan in a preheated 425 degree oven and bake for 20-30 minutes
- The batter should puff up as it cooks
- Once it’s nicely puffed and golden brown, remove from the oven and sprinkle with powdered sugar then serve warm for optimal tastiness

BETH'S DUTCH BABY PANCAKE RECIPE
Serves 4-6

INGREDIENTS:
3 tbsp (45g) unsalted butter
½ cup (60 g) of flour
¼ tsp (1.75ml) salt
1 tbsp (12g) sugar
1 cup (240 ml) of milk
2 eggs
1 tsp (5 ml) vanilla
1 lemon
1 tbsp (7g) powdered sugar garnish
*Serve with fresh lemon wedges or Raspberry Jam
METHOD:
Preheat Oven to 400F (200C)
In a medium bowl whisk together the flour and the milk until smooth, then add the eggs, salt, sugar and vanilla. Whisk to combine and then set aside.
Place butter in an oven safe skillet, place skillet in the pre-heated oven. Watch pan closely and once butter is sizzling, pour batter into pan. Shut the door (do not open!) and allow pancake to bake for 16-18 mins.
Remove from oven, and dust with powdered sugar.
Cut into wedges and serve. With fresh lemon wedges (or raspberry jam)

These gluten free German Pancakes are the perfect Holiday and Christmas time breakfast. They are a yearly tradition in our family that bring Joy to the tummy of any grouchy Grinch. I make them gluten free and dairy free and love them more now than with standard flour.

Recipe:
6 Tbs butter
1 cup white rice flour
⅔ cup tapioca starch
⅓ cup potato starch
1 tsp ground psyllium husk
½ tsp xantham gum (optional)
½ tsp salt
Wet Ingredients
9 large eggs
1 ½ cups milk
1 tsp vanilla
Begin preheating an oven to 425 F. Add 6 Tbs of butter into a 9x13 baking pan and place in the oven while it preheats.
Combine all dry ingredients together in a bowl. Set aside.
Add all eggs into a separate bowl, ideally one with a handle. Whip eggs until frothy using a hand mixer. Add in the milk, and vanilla.
Slowly add in the dry ingredients while blending with the hand mixer. Blend together well. Retrieve the baking pan from the oven. The butter should be melted by now. Pour the batter into the pan and place back into the oven.
Bake at 425° F for 25 minutes. Enjoy
