You're Doing It Wrong: Dutch Baby (German Pancake in Cast Iron)
Dutch babies, or German pancakes, are among the most popular dishes on Facebook's Cast Iron Cooking group. Every day someone posts a picture of the dutch baby they made, often with their kids. Dutch babies are very popular with kids because they're very easy to make, they rise very quickly, and they form weird and funny shapes. But for a long time, like many people making dutch babies, I was doing it wrong. I found out I was overcooking my dutch baby every time. And when it's not overcooked, a dutch baby becomes something entirely different from the popular brown-crusted dish seen on Facebook. A properly cooked dutch baby is much more light and fluffy, with a more prominent egg taste. This is delicious on its own -- but this dutch baby is kicked up a notch by adding natural lemon flavor and a lemon glaze. What's more, it's actually a deutsche baby because it's a German pancake. German Potato Pancakes (makes 8 pieces)
2 large potatoes, finely grated.
2 large potatoes, roughly grated.
1 small onion, roughly grated.
Salt and pepper to taste
2 tbsp all-purpose flour
1 egg
Oil for frying
Apple sauce to serve
Indonesian
Pancake Kentang Jerman (membuat 8 buah)
2 kentang besar, parut halus.
2 buah kentang ukuran besar, parut kasar.
1 bawang bombay kecil, parut kasar.
Garam dan merica secukupnya
2 sdm tepung serbaguna
1 telur
minyak untuk menggoreng
Saus apel untuk disajikan
Deutsch
Kartoffelpuffer (ergibt 8 Stück)
2 große Kartoffeln, fein gerieben.
2 große Kartoffeln, grob gerieben.
1 kleine Zwiebel, grob gerieben.
Salz und Pfeffer nach Geschmack
2 EL Weizenmehl
1 Ei
Öl zum braten

How to make German pancakes
Learn how to make German pancakes -
German Pancakes
6 Eggs
1 Cup Flour
1 pinch of salt
1 Cup Milk
¼ cup (½ cube) Butter
1-Place your ½ cube of butter in a 9x13 pyrex pan.
2-Place the pan and the butter in the oven and then turn the oven on to 425 degrees.
3-While the oven is preheating it will be melting the butter and getting the pan hot.
4-Crack 6 eggs carefully into a blender. You can crack them each into a separate cup first to make sure you don’t get any shells in the batter.
5-Add 1 cup of flour, 1 pinch of salt, and 1 cup of milk in with the eggs.
6-Put the lid on the blender and turn it on for about 15 seconds. Turn it off and scrape down the sides and mix again for another 30 seconds or so.
7-Keep an eye on the butter in the oven. You don’t want the butter getting burned. As soon as the butter is melted, take it out of the oven and wait for the oven to reach 425 degrees.
8-Once the oven is hot enough, pour the pancake batter in the 9x13 pan and place it in the oven. It will take anywhere from 15-18 minutes. Every oven is different so take a peak after 15 minutes. You want it to start getting brown on top.
9-To clean the blender, fill it up halfway with warm water and add a little dish soap. Put the blender back on and blend until it looks clean. Rinse it out and set it out to dry upside down.
9-Once the pancakes are done, carefully take it out of the oven and cut into 8 pieces.
10-Eat them with Maple Flavored Syrup (watch video for recipe on how to make it)

1 cup of milk (1%, 2%, Whole) (240ml)
1 cup of all-purpose flour (120g)
2 Tbsp. of butter (28g)
1/2 tsp. of salt (2g)
1 Tbsp. of granulated sugar (optional) (12.5g)

Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to show you how to make German Pancakes; breakfasts are one of my favorite things to make, and German Pancakes are actually one of the first things I learned how to make when I was a young lad, learning to cook. The do go by other names, Dutch Babies, and then the Finnish Pancake as well, whatever you call them, super easy to do, really yummy, let’s get started. First let’s preheat the oven to 400 degrees F. Now I am going to start with 6 eggs and put them in a large bowl, and then to that, I am going to add one cup of milk, you can use 1 percent, 2 percent, whole milk. And then I am going to come in here and give this a good whisk. And you can do this in a blender if you like as well. And then to this we will add one cup of flour, 1 half tsp. of salt, and that is it for the batter, if you want this a little more sweet, add like a Tbsp. of sugar, and 1 tsp. of vanilla extract. This is the basic recipe. Let’s go ahead and mix this together. All right when you are done it will be nice and runny like that. And now what we do is we take a 13x9 baking dish, and we take 2 tablespoons of butter, and we are going to go ahead and put that right in there, and then we are going to put this in the oven and let the butter melt completely, and then we will take it out, the pan will be hot, and then we will add our batter right in there. All right and then after about a minute or so, we will take our pan out, make sure you use a hot mitt, and make sure the butter gets moved around there a bit, and then we are going to take our batter, and pour it right in the middle, we will go ahead and put this back in the oven, and we will bake it for 20 minutes to 22 minutes, until the sides come up, the batter is going to go up the sides, and get golden brown, it is going to look really cool. All right the timer is done, all right. And then we take them out. They will look like that, really cool. Look at the golden brown on the edges, and then you just top them off, however you like, with powdered sugar, syrup, whipped cream, fruit, whatever you like to do, and you will see it is going to start to go back down, fall back down, and that is totally okay, super natural. All right our German Pancakes are done, turned out amazing, pretty easy to do, if I can do it, you can do it.
