Mom's Chicken Ginger Stir Fry
This stir fry is loaded with ginger. It's savory, spicy, delicious and very herbaceous! Oh and let's not forget the crispy chicken skin that is added to this dish as well. GINGER CHICKEN
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Marination
850 gms Chicken breast boneless, cut into strips, चिकन
Salt to taste, नमक स्वादअनुसार
½ tbsp Oil, तेल
1 tsp light Soy sauce, सोया सॉस
½ tsp Vinegar, सिरका
½ inch Ginger, peeled, julienned, अदरक
½ tsp Black peppercorns, crushed, काली मिर्च का पाउडर
1 tsp Red chili sauce, रेड चिली सॉस
1 tsp Tender Coriander stem, finely chopped, धनिया के डंठल
For Ginger Chicken
1 ½ tbsp Oil, तेल
2-4 Garlic cloves, chopped, लहसुन
1 Green chili (less spicy, roughly chopped) हरी मिर्च
1 medium size Onion, dice, प्याज
Marinated Chicken, मरिनेटेड चिकन
1 inch Ginger, peeled, finely julienned, अदरक
Prepared Sauce Mixture, सॉस का मिश्रण
1 medium size Carrot, peeled, slice, गाजर
¼ cup Spring onion (Scallion, roughly chopped) प्याज़ पत्ता
¼ tsp dark Soy sauce, डार्क सोया सॉस
1 tbsp Cornstarch slurry, कॉर्न स्टार्च का लिजाम
1 tsp Toasted Sesame oil, तिल का तेल
1 tbsp Spring onion, chopped, प्याज़ पत्ता
¼ tsp Black peppercorns, crushed, काली मिर्च का पाउडर
For Sauce
½ tbsp Tomato ketchup, टोमेटो केचप
1 ½ tsp light Soy sauce, सोया सॉस
⅓ cup Water, पानी
1 tsp Red chili sauce, रेड चिली सॉस
½ tsp Sugar, चीनी
1 ½ tsp Cornflour, कॉर्न फ्लोर
For Garnish
Spring onion, chopped, प्याज़ पत्ता
¼ inch Ginger, peeled, finely julienned, अदरक
Coriander sprig, धनिया पत्ता
Process
For Marination
In a bowl, add chicken, salt to taste, oil, light soy sauce, vinegar, ginger, crushed black peppercorns, red chili sauce and tender coriander stem.
Marinate well and keep it aside for further use.
For Sauce
In a bowl, add tomato ketchup, light soy sauce, water, red chili sauce, sugar, cornflour and mix well.
Keep aside for further use.
For Ginger Chicken
In a wok or kadai, add oil once hot, add garlic cloves, green chili, onion and saute it on high flame.
Add marinated chicken and stir fry it for 4-5 minutes.
Add ginger and cook on medium flame for 4-5 minutes. Add prepared sauce mixture.
Add carrot, spring onion and give it a mix . Add dark soy sauce, cornstarch slurry and cook.
Finish it with toasted sesame oil, spring onion and crushed black peppercorns.
Once the chicken is cooked, transfer it into a serving dish, garnish it with spring onion, ginger, coriander sprig and serve hot with steam rice.

We've shown you how we stir fry beef in ginger and spring onion sauce, fish in ginger and spring onion sauce and even pork in ginger and spring onion sauce so how can we not show you how to stir fry chicken in ginger and spring onion sauce? This is an absolutely delightful Chinese stir fry dish that goes really well with rice or even porridge. We're salivating just at the thought of this dish. Everybody needs to know how to cook this.

Marinating the chicken

1 whole chicken (around 600g)
2 tablespoons of fresh ginger juice
2 tablespoons of Chinese white rice wine
2 tablespoons of oyster sauce
1 teaspoon of salt
1 tablespoon of light soy sauce
A few dashes of white pepper
Other ingredients

Some cooking oil
30g of sliced ginger
6 cloves of garlic
6 stalks of spring onion
1 cup of Chinese white rice wine
3 tablespoons of premium dark soya sauce
1 teaspoon of sugar
Some cornstarch solution
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
1 tablespoon of sesame oil
