How To make Ginger Spice Cake
2 3/4 cups cake flour
1 tablespoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 teaspoon salt
1 teaspoon baking soda
1/2 cup sweet butter
1 cup molasses
1/2 cup dark brown sugar
1 cup buttermilk
1/4 cup orange juice
fresh squeezed
2 eggs :
slightly beaten
Preheat the oven to 350 degrees. Butter and flour a 9- x 2-inch round cake pan. Sift together the dry ingredients and set aside in a bowl. In a small saucepan, melt the butter, then add molasses and brown sugar. Set aside to cool. When the butter mixture is cool, stir into the dry ingredients and mix thoroughly. Finish by adding the buttermilk, orange juice and eggs. Place the batter in the prepared round cake pan and bake for 35--40 minutes until well done.

This Buttermilk Ginger Spice Cake Recipe is perfect for weeknight snacking! It's an easy, tasty spice cake recipe that you serve right from the pan. The cinnamon butterscotch topping puts this sheet cake into category of it's own.
Ingredients:
Cake Ingredients:
115g (4 ounces) butter
425g (15 ounces) brown sugar
2 large eggs
500 mL (2 cups) buttermilk
10 mL (2 tsp) pure vanilla extract
10 mL (2 tsp) baking soda
360g (13 ounces) all-purpose flour
5 mL (1 tsp) cinnamon
2 mL (½ tsp) ginger
2 mL (½ tsp) nutmeg
Topping Ingredients:
85g (3 ounces) melted butter
200g (7 ounces) brown sugar
5 mL (1 tsp) cinnamon
60 mL (¼ cup) milk
80g (3 ounces) diced pecans or walnuts
Method:
Preheat the oven to 350°F. (180ºC)
Grease a 9 x 13 cake dish.
Cream the butter and brown sugar together.
Add the eggs, one at a time beating until smooth.
Stir in the buttermilk and vanilla extract.
Whisk together the dry ingredients; then mix into the wet ingredients
until combined.
Scrape the batter into the greased dish.
Bake the cake for 45 minutes, or until a cake tester comes out clean.
Remove from oven and cool on a rack in the pan.
Let the cake cool at least a little before serving - serve directly from the dish.
Optional:
While the cake is baking, prepare the topping - if you want it.
Stir together the butter, sugar, and cinnamon.
Stir in the milk.
At the 45 minute mark spread the topping and nuts on the baked cake.
Return to the oven for 15 more minutes.

How to Make Old Fashioned Gingerbread Cake
A classic gingerbread cake recipe. This old fashioned recipe make a moist, airy cake that's great for snacking and is delicious with a brown sugar or chocolate sauce. Easy to make and works every time.
Old Fashioned Gingerbread
•2 cups flour
•1 ½ teaspoon baking soda
•½ teaspoon salt
•½ cup sugar
•1 teaspoon ginger
•1 teaspoon cinnamon
•½ cup soft butter
•¾ cup Crosby’s Fancy Molasses
•1 egg
•1 cup boiling water
1.Grease and flour an 8”x8” square pan (or line the pan with parchment paper.)
2.Sift together dry ingredients in a large bowl.
3.Add the butter, molasses and egg and beat for two minutes or 300 strokes by hand. (This is a very old recipe…it actually says that.)
4.Add the boiling water.
5.Beat for another two minutes and turn into prepared pan.
6.Bake at 350 for 50-55 minutes, or until cake springs back when lightly touched.
