You don't always think of vegetables when you're thinking of breakfast. But chef Makini Howell has a waffle with squash sauté recipe that may just change your mind.
Gingerbread Waffles
Gingerbread Waffles
Ingredients
⅔ cups Brown Sugar
2 whole Large Eggs, Yolks And Whites Separated
1-½ cup Buttermilk (or Regular Milk Plus 1 1/2 Tablespoons Vinegar)
½ cups Molasses
6 Tablespoons Butter
2 cups Flour
3 teaspoons Baking Powder
1 teaspoon Baking Soda
2 teaspoons Ground Ginger
1-½ teaspoon Ground Cinnamon
½ teaspoons Salt
¼ teaspoons Ground Cloves
¼ teaspoons Ground Nutmeg
¼ teaspoons Ground Cardamom (optional, But Recommended)
Preparation Instructions
In a small bowl, mix brown sugar and egg yolks until smooth and creamy. Stir in buttermilk, molasses, and butter.
Into a large bowl, sift together flour, baking powder, baking soda, ginger, cinnamon, salt, cloves, nutmeg, and cardamom.
In a glass or metal bowl, whip egg whites with an electric mixer until stiff peaks have formed.
Add liquid mixture into sifted dry ingredients and stir together. Fold in egg whites.
Cook according to waffle iron instructions.
(In my waffle iron, using 1/3-cup scoops, I made 16 waffles.)

Spice Waffles
Ingredients:
1 cup wholewheat flour
1/2 cup All Purpose flour
Or 1 1/2 cups All Purpose flour
3 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp cinnamon powder
1 tsp nutmeg
1 tsp ground ginger powder
1 tsp pumpkin spice
Pinch of salt
2 eggs
1/4 cup brown sugar
1 1/2 cups milk
4 tbsp butter (melted)
1 can purée pumpkin or 1 1/2 cups fresh pumpkin
Method:
In a medium mixing bowl add flour, baking powder, baking soda, cinnamon powder, nutmeg, pumpkin spice powder, ground ginger powder, pinch of salt, mix together. Add sugar, 1/2 milk, butter, eggs. Fold in pumpkin and the rest of the milk.

How to make Gingerbread Waffles
These gingerbread waffles are so easy and perfect for the holidays!
Recipe:
This recipe makes around 8 waffles
Ingredients:
2 Cups (240g) All Purpose Flour
2 Tbs (30g) Granulated Sugar
4 Tsp (16g) Baking Powder
1 ½ Tsp (5g) Ground Cinnamon
¾ Tsp (2g) Ground Nutmeg
½ Tsp (1g) Ground Cloves
1 Tsp (3g) Ground Ginger
½ Tsp (2g) Salt
1 ¾ Cup (420mL) Milk
½ Cup (120mL) Vegetable Oil
2 Tsp (8g) Vanilla Extract
1/3 Cup (80mL) Molasses
2 Large Room Temperature Eggs, Separated
Directions:
1. In a large bowl, combine all the dry ingredients. In a separate large measuring cup or bowl, combine the milk, oil, vanilla, molasses, and just the yolks from the eggs.
2. Add the wet ingredients to the dry, and whisk until combined. In a separate bowl, beat the egg whites until they reach stiff foamy peaks, and fold them into the batter.
3. Preheat your waffle maker, and ladle in the batter. Cook according to the manufacturer instructions, which should be around 2-3 minutes. Top with maple syrup and whipped cream if desired. (I like to sprinkle a little cinnamon on top of mine).
