1/2 c Cornstarch Sugar 175 g Butter 1/2 c Icing [confectioner's] 1 c Rice flour 1. Sift cornstarch, sugar and rice flour together. 2. Add butter. Mix with hands until soft dough forms. Refrigerate one hour. 3. Shape dough into 2 1/2 cm balls. Place about 3 cm apart on greased cookie sheet; flatten with lightly floured fork. Bake at 150 xC for 20-25 minutes or until edges are lightly browned. .SH "Variations" 1. Form balls as above. Roll in finely crushed corn flakes or crushed nuts. Press top of ball with thumb. Add a dab of jelly. 2. Mix in 2 Tbls. finely chopped peel and/or 2 Tbls. finely chopped nuts. Flatten with lightly floured fork. Difficulty : easy. Precision measure ingredients. Today I am going to show you how to make my Gluten Free Shortbread cookies!!! These cookies can be made into any shape using a cookie cutter! They are great with honey, or coconut sugar like I made today! I think they would also be great with date sugar! Add in some toasted, chopped Pecans and you will have a delicious homemade Gluten Free Pecan Sandie! This recipe is easily doubled! And the cookie dough freezes well, as do the baked cookies!

For the Shortbread: 3/4 cup Butter {170 grams} 1/4 cup Coconut Sugar {1/4 cup white or brown sugar or 2 Tbsp Honey}
1 Egg Pinch of Salt 2 Cups GF Flour + extra for rolling and if needed to get the right consistency of dough
Oven 350 F. Parchment lined cookie sheets. Bake 20 minutes or until light golden around the edges.

Gluten Free Shortbread - Naughty Nat's Kitchen
In this episode of Naughty Nat's Kitchen, Natalie will be cooking Gluten Free Shortbread.
Recipe
250g Softened butter 1/3 cup castor sugar 1/4 cup rice flour or ground rice 2 1/2 cups gluten free plain flour extra flour for dusting
Cream butter and sugar then add dry ingredients.
Do not over mix.
Turn out onto dusted bench and knead to bring mixture together.
Shape into a sausage shape and slice into 1cm rounds.
