BETH’S SAVORY MONKEY BREAD FROM SCRATCH
Serves 10-12

INGREDIENTS:
3 ½ cups (420g) all-purpose flour
2 ¼ tsp (1 package) (11.25ml) dry active yeast
1 tsp (5ml) salt
2 tbsp (30ml) dill, finely chopped
2 tbsp (30ml) parsley, finely chopped
1 tbsp (15ml) chives, finely chopped
1 tbsp sage (15ml), finely chopped
1 ½ cups (350ml) warm water (between 110-115F (37C-46C)
2 tbsp (30 ml) butter, melted
For Rolling:
2 cups (120g) Italian Blend Cheese
4 tbsp (60g) butter, melted
1 clove garlic, minced
METHOD:
Whisk together the flour, yeast, salt, and herbs. Then add water and slowly mix into a dough, and then into a ball. Dough will be very sticky. Grab dough with floured hands and knead on a floured surface for 20 turns. Adding more flour if needed as kneading. Then pour 1 tbsp (15ml) of melted butter on top of dough and knead for another 10 turns.
Place other 1 tbsp (15 ml) of butter in a clean bowl, and grease the sides of the bowl with it. Place dough inside and cover with a dry towel or plastic wrap. Set in a warm place for 2 hours to rise. It should double in volume.
Once risen, remove the dough from the bowl and place on well-floured surface. Cut dough into quarters. Then cut each quarter, into quarters. You will have 16 pieces.
Roll each piece into a ball, coating with flour if needed. Set aside.
Prepare a 10-cup Bundt pan by spraying it well with baking spray, use a pastry brush to distribute it well. Set aside.
Combine melted butter and garlic in a small bowl and set aside. Place cheese in a small bowl and set aside.
Then dip each dough ball into the melted butter and then roll in the cheese, place in the Bundt pan. Continue process until Bundt pan is covered with one layer, and then begin a second layer on top.
Cover and allow to rise in a warm place for 30 minutes.
Meanwhile preheat oven to 375F (190C).
Once dough has risen for the second-time place in oven and bake for 25-30 mins. Bread will be golden brown and puffed up.
Allow to cool and then loosen edges with a sharp knife to release any baked-on cheese. Then release bread by placing a cooling rack on top of Bundt pan, flipping over, and then gently flip it again to place it right side up on cooling rack to cool slightly.
To serve place on a cake stand, garnished with fresh sage or rosemary leaves. Cut into slices.

Cheeseburger Monkey Bread

Ingredients
Nonstick cooking spray, for greasing the pan
3/4 cup ketchup
3/4 cup mayonnaise
3/4 cup finely chopped dill pickle chips
1/3 cup yellow mustard
Kosher salt and freshly ground black pepper
7 strips bacon
2 tablespoon canola oil
12 ounces ground beef chuck
1 small red onion, finely chopped
6 slices American cheese, roughly chopped
1/4 cup sesame seeds
Two 16.3-ounce tubes refrigerated buttermilk biscuits
Directions
Preheat the oven to 350 degrees F. Spray a 12-cup bundt pan with nonstick cooking spray.
Stir together the ketchup, mayonnaise, pickles and mustard in a medium bowl. Season with salt and set aside.
Arrange the bacon in a large skillet and heat over medium. Cook until golden and crispy, about 4 minutes per side. Transfer the bacon to a paper towel-lined plate; pour the drippings out of the skillet and reserve for another use. Cut the bacon into 1-inch pieces.
Heat the oil in the same skillet over medium-high heat. When it starts to shimmer, add the ground beef, a pinch of salt and a few grinds of pepper. Cook, breaking the meat up with a wooden spoon, until lightly browned in spots and just cooked through, 3 to 4 minutes. Add the onion and cook, stirring constantly, until just translucent and tender, about 2 minutes. Use a large slotted spoon to scoop the meat mixture into a medium bowl, leaving the liquid behind. Stir in 1 cup of the ketchup sauce. Let cool slightly. Fold in the chopped American cheese.
Put the sesame seeds in a shallow bowl.
Separate each biscuit into 2 thinner rounds (the dough is layered, so it will divide easily). Flatten a piece of dough between your hands. Spoon about 1 tablespoon of the ground beef mixture into the center of the dough and top with a piece of bacon. Gather the dough around the filling and seal into a little ball. Dip the smooth bottom of the ball into the sesame seeds. Place the ball into the prepared bundt pan, seed-side down, and repeat until the bottom of the pan is covered. Split the remaining biscuits and stuff with the bacon and filling using the same method -- but don't dip in the sesame seeds. Add to the bundt pan in an even layer.
Bake the monkey bread until golden brown and the balls are no longer doughy, 50 to 55 minutes. Invert onto a platter and remove the pan. Let rest for 10 minutes. Serve warm with the remaining ketchup sauce for dipping.

Garlic Cheese Monkey Bread
Cheese Monkey Bread made from scratch. It is best served right after you take it out of the oven, the pieces of dough can easily be pulled apart and dipped into your favorite dipping sauce.

Ingredients
Makes 40 small servings
Bread Dough
3 1/2 cup (440g) all-purpose flour
1/2 tsp (2g) garlic powder
1/2 cup (50g) Cheddar cheese, grated
1 tsp (5g) salt
25g fresh yeast (2 1/4 tsp active dry yeast or 2 tsp of instant yeast)
2 tbsp (30g) sugar
1/4 cup (60ml) milk, warm
3/4 cup (180ml) water, warm
1 egg, beaten
3 tbsp (45g) butter, softened
Cheese Coating
1/2 cup (110g) unsalted butter, melted
4 cloves garlic, minced
Freshly ground black pepper
2 tbsp chives, chopped
2 tbsp parsley, chopped
1/2 cup (50g) Parmesan cheese, grated
1 cup (100g) Cheddar cheese, grated
For serving
Your favorite dipping sauce, for serving
1. Grease and dust with flour a 9 inch (23cm) bundt pan.
2. Prepare bread dough. In a large bowl mix flour with salt, garlic powder and cheese.
3. In a small bowl add sugar over the fresh yeast and stir until it liquifies. Add milk and stir to dissolve.
4. Add dissolved yeast, water, beaten egg and butter over the flour mixture. Stir to combine and knead until the dough is smooth and pulls away from the sides of the bowl. Cover with plastic wrap and let the dough rest for about 10 minutes.
5. On a floured surface divide dough in 4 pieces. Divide each piece in 10 smaller pieces and roll each piece into ball.
6. In a medium bowl mix melted butter with minced garlic and freshly ground black pepper.
7. In another bowl mix cheddar and parmesan cheese with parsley and chives.
8. Dip each ball of dough into the butter mixture and coat with cheese mixture.
9. Place balls of dough in the prepared bundt pan.
10. Cover the pan with a greased plastic wrap and let the dough rise for 30 minutes to 1 hr .
11. Meanwhile preheat oven to 350F (180C).
12. Bake for 25-30 minutes until dark golden brown on top.
13. Remove from the oven and let cool in the pan for 5-10 minutes.
14. Remove the bread from the pan and serve with your favorite dipping sauce.
