Grandma's gooseberry pie with crumble | Homemade gooseberry pie | Gooseberry recipe
You have gooseberries, oatmeal and maple syrup at home. Bake a simple gooseberry pie, a great dessert to use up seasonal fruit.

Filling
300 g gooseberries
100 g maple syrup
100 g granulated sugar
Dough:
200 g all purpose flour
100 g rolled oats
50 g granuleted sugar or icing sugar
1/2 teaspoon baking soda
150 g butter - at room temperature
1 egg
1. Clean and chop the gooseberries. Place the gooseberries in a pan, pour the maple syrup over them and sprinkle with sugar. Cook for 20 minutes or until the filling is reduced by half. Leave to cool.
2. Mix flour, oats, sugar and soda together. Add butter and make a crumble (you can also mix in a food processor, it's faster).
Remove 7 tablespoons of crumble (150 g) and set aside. Add the eggs to the remaining crumble and mix.
3. Preheat the oven to 180°C. Put the dough into the greased tin and spread evenly with a spoon. Add the cooled gooseberry mixture. Finally, sprinkle with the crumble.
Bake for 35-40 minutes.
