How To make Gourmet's Boston Baked Beans
2 c Dried navy beans, picked ove
- and rinsed 3/4 lb Salt pork
1/2 c Molasses
1/2 ts Dry mustard (english style)
1/4 ts Paprika
1 ts Onion, grated
In a bowl, combine the beans with 4 cups cold water and let them soak overnight. Drain, reserving any remaining liquid. Transfer them to a small heavy kettle, and add fresh water to cover. Simmer, covered, for 60 minutes. Drain in a colander, reserving the cooking liquid and combining it with the soaking liquid. To the kettle, add a quarter lb. piece of salt pork and the beans and bury the remaining piece of pork, well scored, in the center of the beans. In a small bowl, stir together the molasses, 1/2 cup of bean liquid, mustard, paprika, and onion. Pour the mixture over the beans and stir in. Bake the beans, covered, in the middle of a preheated 300f oven for 5 hours, stirring in some of the bean liquid at hourly intervals as necessary to keep the beans just barely covered. 1/4 cup bbq sauce
2 tbsps yellow mustard
1 tbsp dijon mustard
1-2 tsps roasted garlic better than bouillon
4-5 slices thick cut bacon
1 tbsp hot sauce
2 tsps worcestershire sauce
28 oz buschs baked beans
16 oz black beans
16 oz white chili beans
1 tbsp apple cider vinegar
1 tbsp garlic
green onion
salt, pepper, garlic, onion powder, smoked paprika
Directions:
Drain black and white beans and chop veggies. Start by cooking your bacon until crispy, and then add your veggies. Cook for 3-4 minutes until tender and then add in garlic and better than bouillon. Mix to combine. Add in ground beef and cook until no longer pink. Add beans and mix to combine. Add brown sugar, worcestershire and hot sauce, bbq sauce, ketchup, and mustard. Mix well and then begin to season to taste. Simmer for at least 30 minutes on low. Taste as you go and adjust the seasoning per your preference.

Contemporary Fèves au Lard
Ingredients:
500 mL (2 cups) dry white pea beans or Great Northern
1 large onion, chopped
1.5 litres (6 cups) Ham stock, or chicken stock, or water
60 mL (1/4 cup) maple syrup
60 mL (1/4 cup) molasses
60 mL (1/4 cup) ketchup
10 mL (2 tsp) mustard powder
5 mL (1tsp) summer savoury (optional)
2.5 mL (1/2 tsp) ground pepper
1 piece of 340 g (3/4 lb) bacon or salt pork
Method.
Pre heat oven to 140ºC (275ºF).
Cover beans with water and soak overnight, or cover with water and boil 45 minutes.
Drain beans and place in bean pot, stir in all of the other ingredients, nestling the pork on top.
Cover tightly and bake 5-6 hours, checking occasionally to see if you need to add more liquid.
If you used a chunk of bacon / salt pork, reve and chop up before stirring back into beans.
Bake another 30-40 minutes with the lid off.
