How To make Grandma's Applesauce Cake
1/4 C Butter
Softened
3 Lg Eggs
1/2 C Apple Juice
1/2 C Unsweetened Applesauce
2 C Unbleached White Flour
2 Tsp Baking Powder
1 Tsp Baking Soda
2 Tsp Cinnamon
1/2 C Raisins :
Optional
1 Apple, Washed, Peeled, Cored Slice Thinly
Topping Unsweetened Applesauce :
Warmed
In a medium-sized bowl beat together until creamy; butter, eggs, apple juice and applesauce. Add flour, baking powder, baking soda and cinnamon. Beat well. Stir in raisins if desired. Oil and flour an 8" square bakig pan. Line the bottom of the pan, one layer deep, with thinly sliced apple. Spoon batter over apples and smooth top. Bake at 350 degrees for 25 to 30 minutes or until well-browned. Invert onto a wire rack to cool, apple side up. Serve apple side up on individual dessert plates and spoon warm applesauce over each portion.

The recipe for this delicious Applesauce Cake was given to me by a sweet lady named Barb. Her mother would make it for her birthday and sometimes for Thanksgiving and Christmas. This cake became a family tradition and I can see why because it is simply amazing. I love old recipes and I can definitely see this cake becoming a family favorite in my home. The cake is so moist and flavorful and eaten with a cup of coffee is just heavenly. Thank you Barb, for this outstanding recipe!
Applesauce Cake
Ingredients
2 1/2 cup applesauce
2 1/2 cup light brown sugar
1 cup shortening
2 eggs
3 cups flour
1 tsp nutmeg
1 tsp cinnamon
1 tsp allspice
pinch salt
1 tsp baking soda
1 cup raisins
1 cup chopped dates
1 cup nuts (I used walnuts)
Instructions
Cream shortening and sugar together
In a separate bowl, add soda to applesauce - it will be foamy - then add to shortening and sugar mixture.
Sift together flour, salt, and spices, then add one cup at a time to the first mixture, blending well between each addition.
Dredge nuts, raisins, and dates lightly with a small amount of flour, and add to first mixture.
Add 2 unbeaten eggs last and continue to mix lightly until eggs are blended into the cake.
Pour into a greased, lightly floured tube pan.
Bake in a slow oven (325 - 350) for at least one hour. I baked mine at 340 for 1 1/2 hours.
Drizzle with a buttercream glaze.
Buttercream glaze
Mix half stick of melted butter, 1/4 cup milk, tbsp vanilla extract, and 2 to 3 cups of powdered sugar depending on how thick or thin you like the glaze.
Note: Tube pan is best. Bundt pan seems to stick.

2 extra large eggs
2 cups sweetened applesauce
1 cup shortening
2 cups brown sugar ( packed )
4 teaspoons baking soda
4 cups flour
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon cardamom ( optional)
1 cup dried fruit like raisins ( optional )
1 cup chopped nuts ( optional )
Mix shortening, eggs, sugar, spices & applesauce till smooth. Fold in flour and soda. Put in a greased 13x9 pan and bake 40 minutes at 350F. Frost with favorite frosting ( I like cream cheese )

APPLESAUCE CAKE
This classic applesauce cake is a favorite old-fashioned dessert from my Southern grandma. Sugar, spices, cinnamon applesauce, raisins, and walnuts are baked into a rich and moist irresistible treat.

INGREDIENTS
2 cups flour

½ cup brown sugar
2 eggs room temperature
1 teaspoon vanilla
2 cups cinnamon applesauce
½ cup milk
1 cup raisins
1 cup walnuts chopped
INSTRUCTIONS
Preheat oven to 350 degrees.
In a small bowl pour the milk and place the raisins in the milk. Let them sit while preparing the rest of the cake.
Prepare a 9x13 pan by lining the bottom with parchment paper and spray with nonstick spray.
In a medium-size bowl whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves. Set aside.
In a large bowl beat together butter and sugars until mixed.
Add the eggs and vanilla and beat until mixed together.
Add the dry ingredients slowly to the butter/sugar mixture and beat just until combined.
Add the applesauce and mix on low just until combined.
Add the raisins and milk mixture and walnuts and mix until just combined.
Bake for 30-35 minutes or until a cake tester in the middle of the cake comes out clean.
Once the cake has cooled frost with cinnamon cream cheese frosting.
CINNAMON CREAM CHEESE FROSTING Ingredients 8 ounces cream cheese ½ cup butter, softened 3 cups powdered sugar 2 tablespoons heavy cream 1 teaspoon vanilla ½ teaspoon cinnamon ¼ teaspoon salt How to Make Frosting In a large bowl beat together the cream cheese and butter until smooth. Add the powdered sugar and beat on low until powdered sugar is mostly mixed in. Add cream, vanilla, cinnamon and salt and mix on medium speed until all smooth and creamy.
