Hello loves! Today's recipe is my amazing, flavorful and colorful pineapple bowl. It has the perfect contrast between flavors that hit the spot on your palate the way anything this beautiful should. It features my cilantro-lime rice, corn salsa and bbq shrimp. This is such a versatile dish that you can substitute anything and still have a delicious outcome. I hope you enjoy this video. Ingredients
Cilantro-Lime Rice:
1 cup rice
1 1/2 cups hot chicken or vegetable stock
Fresh chopped cilantro (add as much or little as you like)
1 lime (add as much or little as you like)
1 tsp salt (adjust as per your taste and preference
1 tbsp butter
1/4 cup chopped onion
2 cloves minced garlic
Corn Salsa:
4 ears corn or 2 cups of frozen corn
1/2 cup diced red (purple) onion
fresh chopped cilantro
1 lime
1 tsp salt (adjust as per your taste preference)
1 tsp jalapeño pepper diced finely without seeds. Keep seeds if you want the heat from the pepper
Shrimp:
medium peeled, deveined shrimp
1/2 tsp each of adobo seasoning, lemon pepper seasoning, old bay seasoning, random bbq seasoning from trader joes
1 tsp green seasoning
Pineapple BBQ Sauce
original bbq sauce
pineapple chunks (as much or little as you like)
1/2 tsp each of onion powder (not salt), garlic powder (not salt), adobo seasoning, garlic lovers seasoning, garlic and onion powder + salt and pepper seasoning
1/3 cup brown sugar
Please feel free to change the seasonings to your own liking. I just know it's gonna be delicious no matter what.

1- pound fresh cod cut into 4 even chunks
(can also use Halibut, Sea Bass, etc.)
½ teaspoon salt and pepper
2 cup flour
1 cup corn starch
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoon Cajun season
1 teaspoon smoked paprika
112 oz bottle light beer
Corn tortillas
Canola oil or vegetable oil
crema
½ cup mayonnaise
¾ cup sour cream
1½ tablespoons lime juice
1 tables poon Sriracha
1 tbsp cornstarch
coleslaw
1 tables poon lime juice
3 tablespoons mayonnaise
1 tablespoon honey
1 teaspoon salt
3 cups purple cabbage
1 cup carrots, shredded thin
¼ cup cilantro

These healthy gluten free spicy fish tacos with fresh pineapple salsa are so delicious! They are so healthy and quick and easy and taste amazing! The recipe is down below.

Makes 6 tacos
Ingredients
Fish:
2 skinless, white fish fillets (I used tilapia)
1/2 a lime, juiced
1/4 of a red onion thinly sliced
1 clove of garlic
1/4 of a bell pepper thinly sliced
1/4 tsp cayenne
1/2 tsp chilli
1 1/2 tsp cumin
2 tbsp fresh cilantro
2 tbsp olive oil
6 corn tortillas
1/2 an avocado
1/2 cup of green and red cabbage
1/2 cup of thinly shaved carrot
Pineapple salsa:
1 cup of pineapple finely chopped
1/2 a tomato finely diced
2 tbsp red onion finely chopped
2 tbsp fresh cilantro
1. In a bowl, cover the fish with the cumin, chilli, cayenne, salt, pepper and lime juice.
2. Heat a frying pan to medium heat and drizzle with olive oil. Once oil is hot, add the red onion and garlic. Once the red onion is translucent and the garlic is fragrant, add the fish and bell pepper. Wait one minute and flip the fish. Let it cook for a few more minutes until it is fully white in the centre and cooked. You know your fish is cooked if when you try to flake it it comes apart easily into mini flakes.Sprinkle with fresh cilantro and set aside.
3. In a medium size bowl, add pineapple, tomato, cilantro, red onion, and salt. Mix together and set aside.
4. Chop up red and green cabbage,carrots, cilantro, and avocado.
5. Heat up corn tortillas. Add toppings and serve immediately.

Grilled Fish on Pineapple Planks with Spicy Pineapple Salsa

Ingredients
1 ripe pineapple
One 2-inch piece fresh ginger, peeled
1/2 cup coarsely chopped fresh cilantro
2 tablespoons vegetable oil, plus more for brushing
2 ripe plum tomatoes, seeded and diced
1 small orange bell pepper, finely chopped
1 medium jalapeno, chopped (seeded, for less heat, if desired)
Juice of 1 lime
1/2 small red onion, finely chopped
Kosher salt
2 tablespoons soy sauce
1 tablespoon honey
Four 6-ounce skinless fillets bass or snapper
Directions
Prepare a grill for medium-high heat. Cut the top from the pineapple and discard. Cut the sides off to make 4 flat planks. Finely dice the pineapple flesh (discard the core) and put it in a medium bowl.
Finely grate the ginger and add half to the bowl with the pineapple; reserve the rest. Add the cilantro, oil, tomatoes, bell pepper, jalapeno, lime juice and onion to the diced pineapple. Season with 1/4 teaspoon salt, then toss well and refrigerate while you make the fish.
Stir the soy sauce and honey together with the remaining ginger in a small bowl. Brush the fish with oil and sprinkle lightly with salt. Brush the tops (the flesh side) of the pineapple planks with some of the soy sauce mixture and place the fish fillets on top of the planks. Brush the remaining soy sauce mixture on the tops of the fillets, folding the thinner part of the fillets under if needed to fit on the plank.
Place the pineapple planks on the grill, cover and cook until the fish is just cooked through, 15 to 20 minutes. Serve the fish on the planks topped with some of the salsa. Serve the remaining salsa on the side or reserve to serve with chips.
