How To make Grilled Polynesian Chicken

2 tb Soy sauce, lite
1 tb Brown sugar
1/4 ts Ginger
1/8 ts Garlic powder
4 Chicken breast, boneless
8 oz Pineapple slices, drained
4 ts Coconut
In small bowl, combine soy sauce, brown sugar, ginger and garlic powder; mix well. Place chicken on plate. Brush both sides of each breast half with soy sauce mixture. Cover; let stand 15 min. at room temperature to marinate. Heat grill. When ready to barbecue, oil grill rack. Place chicken on gas grill over med. high heat or on charcoal grill 4-6 inches from med. high coals. Cook 8-10 min. or until chicken is tender and juices run clear, turning once. Top each with pineapple slice during last few minutes of cooking time. Serve sprinkled with coconut. S: Fast & Healthy. Calories: 190, Fat: 4g

- 1.5 lbs Boneless Skinless Chicken you can use chicken breasts or chicken thighs cut into small 1-inch cubes
- ½ cup All-Purpose Flour
- 1 Tablespoon Olive Oil can replace with canola oil
- 1 Cup Sliced Pineapples cut into small 1-inch cubes
Ingredients to Make the Sauce
- ¼ Cup Pineapple Juice
- 1 Tablespoon Ketchup
- 1 Tablespoon Dark Soy Sauce
- 1 Teaspoon Vinegar can use apple cider vinegar or rice vinegar
- 1 Tablespoon Chili Garlic Sauce
- 1 inch chopped Ginger
- 1 Teaspoon minced Garlic
- 2 Tablespoons Honey
Garnish
- Fresh Chopped Parsley for garnish (OPTIONAL)
1) In a bowl or a pyrex measuring cup combine the ingredients for sauce. Stir lightly. Taste it. Adjust with more honey if you want it sweeter. If it's already too sweet, then adjust with some vinegar or chili garlic sauce.
2) Place chicken pieces in a bowl. Coat them with flour.
3) Pour Olive Oil in slow cooker. Add Chicken and sliced Pineapples. Pour the sauce. Use a spoon to coat it evenly.
4) Cover the pot with a lid and slow cook on High for 2-hours or on low for 4-hours. Garnish with chopped parsley (if desired) and serve.
Adjust the sauce as per your taste. If it tastes too sweet then add some chili garlic sauce. I haven't tried coating chicken with gluten-free flour. So, I cannot comment on that. If you happen to try, let me know how it turned out.
