How To make Grilled Prawns with Fresh Coriander
1 lb Prawns, fresh or frozen
MARINADE:
1 tb Light soy sauce
1 ts Rice wine or dry sherry
1 ts Sesame oil
SAUCE:
2 tb Fresh coriander; minced
2 ts White rice vinegar
1 ts Fresh ginger; finely chopped
PREHEAT THE brOILER. Peel the prawns and discard the shells. Using a small sharp knife, split the prawns partially and remove the fine digestive cord. Pat the prawns dry with paper towels. Mix the marinade and combine with the prawns and let sit for 10 minutes. Prepare the sauce ingredients and mix together and set aside. Lay the prawns on a baking tray big enough to fit under the broiler. Or alternatively, you could cook them on the barbecue, weather permitting. Cook the prawns 3 minutes on one side, turn and cook for 2 minutes on the other. Turn onto a serving platter and serve with the sauce.

MOROCCAN GRILLED PRAWNS
Ingredients
10-12 jumbo prawns, cleaned and deveined
15-20 garlic cloves
2 inch ginger, roughly chopped
1 lemon, halved
Salt to taste
1 tbsp coriander powder
1 tsp cumin powder
½ tsp black pepper powder
¼ tsp cinnamon powder
1 tbsp red chilli powder
½ tsp turmeric powder
¼ small bunch of fresh coriander
2-3 tbsps oil
Lemon wedges to serve
Fresh mint leaves for garnish
Method
1. Put the garlic cloves in a grinder jar, add ginger, squeeze the juice of lemon directly into it. Add salt, coriander powder, cumin powder, black pepper powder, cinnamon powder, red chilli powder, turmeric powder, fresh coriander and ½ cup water and grind to a fine paste.
2. Transfer the ground paste in a large bowl. Add the prawns and rub the mixture well on all sides of the prawns. Set aside for 30 minutes.
3. Thread 2-3 prawns over each satay sticks.
4. Heat oil in a non-stick grill pan. Place the prawns on it and grill on high heat for 3-4 minutes. Flip the prawns and cook the other side for 2-3 minutes as well.
5. Arrange the prawns on a serving plate, garnish with mint leaves and serve hot with lemon wedges.

Recipe : Chilli Lime Grilled Prawns
Serves : 4 persons

Ingredients :
Prawns
1 tbsp olive oil
1 tsp red chilli powder
1/4 cup parsley
1 tsp cumin powder
1 tbsp lemon juice
1 tbsp garlic paste
1/2 tsp ginger paste
coriander
black pepper for seasoning
salt to taste
10-12 devein prawns
Dip
1/4 cup hung curd
1 tsp garlic juice
2 tsp fresh coriander
salt to taste
black pepper for seasoning
Method :
Prawns
- Take a bowl and add olive oil, red chilli powder, parsley, cumin powder and coriander
- Sprinkle some salt to taste and black pepper for seasoning
- Add in the lemon juice, garlic paste, ginger paste and mix well to make the marination
- Take the prawns and mix well in the marination
- Thread the marinated prawns on skewers and toss them on a heated pan with oil
Dip
- Take a bowl and mix in hung curd, garlic juice and coriander
- Sprinkle some salt to taste and black pepper for seasoning
