How To make Ground Beef Summer Sausage
2 Lb. ground beef
4 Tbsp. Morton Tender Quick salt
1/4 Tsp. garlic powder
1/4 Tsp. coriander seed
1/4 Tsp. basil leaves
2 Tbsp. liquid smoke
1 C. water
1/4 Tsp. ground pepper
1/4 Tsp. mustard seed
1/4 Tsp. nutmeg
Mix all ingredients together and form into 2 rolls, 2 inches in diameter (makes 4 rolls). Seal roll in aluminum foil and refrigerate 24 hours. Bake 1 hour and 15 minutes in foil at 350 degrees in broiler pan. Open the foil and drain. When cool, wrap in plastic wrap and refrigerate.

In this video we make what the book calls a traditional fermented American style Cervelat also knows as a traditional American Summer Sausage. In the book it says this sausage can go by many names summer sausage Cervelat or Thuringer.
This version of the recipe is missing some of the staples we see in fully cooked summer sausage mainly the yellow mustard seed. Overall great sausage though.

Here is a quick meal that anyone can make in one pot in less than 30 mins. Sausage and Rice with some fire roasted tomato's and bell pepper. #shorts
Ingredients:
14 oz Andouille Sausage or Smoked Sausage
1 tbsp of oil
1 bell pepper
1 tsp smoked paprika
1/s tsp dried oregano
1/2 tsp dried thyme
1/4 tsp garlic powder
1/5 onion powder
1/8 tsp cayenne pepper
1/8 tsp black pepper

1 1/2 cup chicken broth

Summer sausage is great with any combination of beef, pork, or venison and is relatively easy to make.
In this how to make summer sausage video I used all beef and 75mm fibrous casings and the recipe is as follows:
Salt 19g/kg
Black Pepper 4g/kg
Coriander 1.5g/kg
Garlic 4g/kg
Mustard Seeds 4g/kg
Sugar 12g/kg
Beer 20g/kg
Sodium Nitrite/Cure 3g/kg
Sodium Erythorbate 0.5g/kg
Binder 10g/kg
Water 80g/kg
