How to Cook HEARTY MEAT & TOMATO SOUP. Minced Beef & Tomato Soup. Recipe by Always Yummy!
Mouth-watering, rather spicy, hearty and warming tomato soup with veggies and minced meat pieces – it comes out quick, tasty and with a little effort.

✅ Ingredients:
• beef mince – 28 oz | 800 g
• onion – 10 oz | 300 g
• garlic – 2 cloves
• meat broth – 4 cup | 1L
• chopped tomatoes – 28 oz | 800 g
• water – 1,25 cup | 300 ml
• carrot – 3 oz | 100 g
• celery – 7 oz | 200 g
• frozen beans – 5 oz | 150 g
• potato – 7 oz | 200 g
• parsley – 3 tbsp | 10 g
• dried basil – 1 tsp
• dried thyme – ½ tsp
• salt – to taste
• ground black pepper – to taste
• vegetable oil – 1 tbsp
✔︎ You will need:
• stockpot
• carving board
???? Preparation:
1. Cut the bulb onion, carrot and potato into small dices, celery into thin slices, chop up the parsley and garlic.
2. Add some vegetable oil into a stockpot and fry the bulb onion for 3 minutes over low heat stirring occasionally.
3. Add the meat mince into the stockpot, stir and cook for 5 minutes over low heat.
4. Add the minced garlic and simmer for a minute.
5. Then add the meat broth, crushed tomatoes, water, carrot, potato, celery, beans, basil, thyme, salt and pepper into the stockpot, bring to a boil and cover with a lid.
6. Cook for 30 minutes over low heat.
7. When serving sprinkle your winter meat soup with fresh parsley.

My Moms Stuffed Pepper Recipe????????
For 3 large bell peppers:
1 cup medium grain rice
Washed and soaked for 1 hour
2/3 lb ground beef
2 tbsp ghee or oil
1/3 cup water
1 tsp cumin
1 tsp garlic powder
1 tsp all spice
1 tsp safflower or paprika
1/2 tsp black pepper
1.5 tsp salt
Cover in water
1/4 cup tomato paste
8 cloves of garlic Pounded with 2 tsp salt
2 lemons
2 tsp dried mint
Beef Vegetable Medley in Chunky Tomato Sauce over Pasta Recipe
This is a quick and easy one pot dinner using ground beef and lots of vegetables! I think whole Marzano tomatoes really adds to the brightness in this recipe. Serve over pasta or rice! Enjoy.

Beef Vegetable Medley in Chunky Tomato Sauce over Pasta Recipe
INGREDIENTS:
1 pound of cooked pasta - I used Rotini
1 pound ground beef
1 diced small onion
1 large diced carrot
1/2 small diced bell pepper
1 cup diced mushrooms
1 1/2 cups or 1 small diced zucchini
1 - 28oz can whole Marzano tomatoes and juice
3-4 large cloves minced garlic
1 tbsp. tomato paste
1 tsp. oregano
1 tsp. basil
olive oil
salt and pepper
Parmesan cheese
In a skillet on med high, brown and chop ground beef.
Drain excess fat. Add salt, black pepper, cook and stir for one minute.
Remove from pan.
On med heat, add olive oil, diced onion, bell pepper, carrot, pinch
salt and black pepper. Cook and stir 2-3 minutes.
Add minced garlic and mushrooms. Cook and stir 1-2 minutes.
Add tomato paste, stir until dispersed.
Add chicken broth/water and stir. Bring up to a simmer and add spices and stir.
Add marzano tomatoes and juice. Stir, cook and chop tomatoes.
Bring to simmer and cook for 5 minutes.
Add zucchini and ground beef to pan. Stir, bring to simmer and cook for 10 minutes or until zucchini is tender.
Add water as needed.. Taste for seasonings.
Serve over pasta.
Garnish with Parmesan cheese
Enjoy.

30 minutes ground beef pasta
1 Tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 pound lean ground beef (90% lean)
2 teaspoon thyme or Italian seasoning
1/2 tsp crushed red pepper flakes
Paprika
1/2 tsp Grated ginger
1 bay leaf
Salt and pepper to taste
1 can (14-24 ounces) tomato sauce or marinara sauce
2-3 cups beef stock
12oz pasta
