How To make Hidden Frosting Carrot Zucchini Cake
6 oz Cream cheese, softened
2/3 c Sugar
3 Eggs
1 1/3 c Packaged biscuit mix
2 ts Pumpkin pie spice
1/2 c Carrot
shredded
1/2 c Zucchini :
shredded
1/4 c Cooking oil
1 t Vanilla
Powdered sugar
Grease and lightly flour a 8 x 8 x 2" baking pan; set aside. For filling, in a small mixer bowl, combine cream cheese and 1/3 cup of the sugar. Beat with electric mixer on medium speed until fluffy. Add 1 egg and beat mixture until smooth; set aside. In a large mixer bowl, stir together biscuit mix, 1/3 cup sugar and spice. Add carrot, zucchini, oil, 2 eggs and vanilla. Beat on low speed for 30 seconds. Beat on medium speed for 2 minutes. Pour half the batter into prepared pan. Spoon filling atop. Spoon remaining batter over filling. Bake in a 350 degree oven for 35 to 40 minutes or until done. Cool on wire rack. To serve, sift powdered sugar over cake, if desired. Cut into squares.

Carrot cake with a few extras!!! What?? I came across this recipe while on Facebook, clicked the link and decided to give it a try. I'm so glad I did. This turned out amazing!!
The website this recipe came from is called Mom on Timeout. I think I might give some more of her recipes a try.

The only changes I made were:
I doubled the cream cheese frosting and I added cardamom to the cake.
The other changes I would make would be to not squeeze out so much of the water out of the zucchini. I found after a few days the cake went dry really quickly. It needs a little added moisture...maybe next time I'll add some crushed pineapple into it too.

I just discovered a chocolate cake with hidden veggie recipe but does not affect its taste! So yes, this has vegetables in it! And its so delicious, perfect for my picky eaters at home!
Here's the recipe:
2 cups flour
3/4 cup cocoa powder
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 cups grated zucchini with juice
1 cup white sugar
3/4 brown sugar
1 cup canola oil
1/3 cup yogurt or sour cream
4 eggs
bake at 350F (175C) for 25-30 minutes
