Hawaiian Baby Back Ribs and Ahi Poke

SPICY GUAVA GLAZED RIBS
- 1 cup guava jelly
- ½ cup ketchup
- ¼ cup of water
- 1 tablespoon fresh ginger, grated
- 1 large garlic clove, grated
- 4 scallions minced, white parts only
- 1 teaspoon of spicy chili garlic sauce
- 3 tablespoons unsalted butter
- 1 rack of baby back ribs
Heat grill on medium high. Remove membrane from the back side of the ribs, then season with salt and pepper. Wrap ribs in aluminum foil.
Place wrapped grill on indirect heat. Cook for 2 hours.
Add all other ingredients to a medium sauce pan on low heat. Cook until glaze is thick, about 10 minutes. Brush on both sides of ribs before placing on the grill. Occasionally brush more sauce as you flip ribs. Remove ribs, let stand for 5 to 10 minutes, before slicing. Pour remaining sauce over ribs. Serve
CRUNCHY SLAW
- ½ small head Napa Cabbage, finely sliced
- 4 small cucumbers, julienne cut on a mandolin
- 3/4 cup chopped roasted, salted peanuts
- 1/2 cup chopped fresh cilantro leaves
- 1 mango, peeled and cored cut in small cubes
- 2 teaspoons of black sesame and salt mix, if not available substitute 2 teaspoons of black sesame seeds and add an additional 1/2 - - teaspoon of salt
DRESSING:
- 1/3 cup peanut oil
- ¼ cup freshly squeezed lime juice
- 2 tablespoon rice wine vinegar
- 2 teaspoons sugar
- 1 1/2 teaspoon Hawaiian salt
- 1 garlic clove, grated
- 1 teaspoon of chili garlic sauce
Combine cabbage, cucumbers, and cilantro in a large bowl. Whisk lime juice, sugar, salt, garlic and chili sauce in a small bowl, slowly drizzle oil into mixture while whisking. Pour over cabbage mixture and toss to coat. Add mango, peanuts, black sesame seed mix and serve.
LAYERED AHI POKE WITH AVOCADO SALSA
- 10 Wonton Wrappers
- Canola oil for deep frying
- 2 tsp of Hawaiian sea salt
- 1 1/2 lb sashimi-grade ahi tuna, cubed in ¼ inch
- 1tbsp sesame oil
- 2 tsp of toasted sesame seeds
- 2 scallions thinly sliced
- 1tbsp low sodium soy sauce
- 1 small serrano pepper, seeded and finely chopped
- 2 large ripe avocados
- 2 tbsp fresh cilantro, chopped
- 1inch ginger, peeled and grated
- 1 limes, juice
- 1 tsp chili sauce
- 1 tsp Hawaiian salt
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- juice from half of lemon
- 1 tbsp Siracha
Stack wonton wrappers on top of each other and slice in ¼ inch strips. Fill a 12 inch skillet with about an inch of oil. On high heat, heat oil until hot. Add strips in batches, do not over crowd the pan. Wonton wrappers cook quickly. Cook until golden brown and drain on a plate with a paper towel. Sprinkle with salt after removing from oil.
In a small bowl add scallions, sesame oil, serrano, soy sauce and sesame seeds. Mix well. Cut ahi tuna in small ¼ inch cubes, add to bowl and gently mix. Set aside.
In another bowl, scoop avocado into a bowl. Add chili sauce, ginger, lime juice, cilantro, 1 tsp of salt and mix. Gently mash together. Set aside.
In a small bowl, add mayo, mustard, lemon, and Siracha and mix well.
To assemble, on a plate, add a layer of avocado mixture, top with marinate Ahi tuna. Drizzle with siracha mayo and top with wonton strips. Serve immediately or keep in refrigerator until ready to serve.
LOCAL FAMILY PLANTATION COOKING Corned Beef Hash, Spam & Beans, Beef Tomato, Sweet Sour Spare Ribs
Today, my mom and all her brothers got together with grandma to cook dishes that they used to eat when they were younger! Featured dishes include: Corned Beef Hash, Spam and Beans, Beef Tomato, and Sweet and Sour Spare Ribs!

CORNED BEEF HASH
Fresh corned beef (shredded)
2 peeled and boiled potatoes
1/2 onion (sautéed)
Eggs (To you liking)
SPAM AND BEANS
1 can Spam
2 carrots
1 pkg green beans
1/2 round onion
BEEF TOMATO
Soak 1 pound of sukiyaki style beef about 20 in this sauce:
1 tbs grated fresh ginger
1tsp cornstarch
1 tsp sugar
2 1/2 tsp shoyu
3 tbs sake
Stir-fry:
Oil
Chopped garlic 2-3 cloves
1 lb beef
Remove beef from pan just before fully cooked
Stir fry one onion, sliced
Add 2-3 stalks celery, sliced
Just before fully cooked, add beef back to the pan for about two minutes.
Add about one T. of sugar (Grandpa used to use C&H)
2 T. shoyu and ketchup
Add sliced tomatoes and bell peppers. Remove from heat after one minute.
Do not cover the pan to retain the bright colors of the peppers and prevent overcooking.
SWEET SOUR SPARE RIBS
5 lb Spare ribs (Cut into pieces)
1/3 C. flour
1/3 C. Shoyu
Mix by hand and brown in oil
1 1/2 C. water
1 C. vinegar
1 1/2 C. brown sugar
1/3 C. shoyu
1 T. salt
2 pieces ginger
2-3 cloves garlic
dash of cornstarch
canned pineapple (optional)

Kau Yuk | A Belly Pork Favorite!! | Part of a Traditional 9 Course Dinner ????????

Kau Yuk is a popular family and party favorite. This dish is braised belly pork that is arranged in a bowl skin side down alternating with potatoes. It is steamed for 2 hours and inverted to show a beautiful pattern of pork slices and potatoes. Growing up, my mother only made this for company and special occasions. 9 course Chinese dinners at restaurants usually included kau yuk with Parker House bao buns. Today very few people know how to make this savory and mouthwatering dish. Takeout combination plates include kau yuk but it is pale compared to my version. Many people buy a kau yuk sauce and just boil belly pork with the commercial red sauce. Make this dish and everyone will be astonished at the taste and presentation. There is no food coloring in mine. The natural color comes from the various sauces.

How to Make Hawaiian Style BBQ Teriyaki Chicken
Nothing beats a good BBQed Teriyaki fresh from the grill with a side of rice and mac salad. Brought to Hawaii from Japan, this recipe has been adopted by the islanders. Teriyaki is most commonly marinated with chicken thighs and beef.
Ingredients:
2-3 lbs skinless and boneless chicken thighs
Base Teriyaki Sauce:
1 ½ cups shoyu (soy sauce)
1 cup sugar
Optional additions:
1 tsp grated ginger
2 cloves grated garlic
2 tbsp sesame oil
2 tbsp lightly grounded sesame seeds
1 tsp ajinomoto (MSG)
2 stalks of green onions

Hurricane's Nearly Impossible Rib-Diculous South African BBQ Ribs Challenge in Sydney, Australia!!
Professional eater Randy Santel vs Hurricane's Grill's nearly impossible Rib-Diculous South African BBQ Ribs Challenge w/ chicken wings, hosted by the Hurricane's Grill located in the Circular Quay neighborhood of Sydney, New South Wales, Australia!! My beautiful girlfriend @KatinaEatsKilos and I started our giant 2.5 month long 2023 Australia Tour back in early February 2023. We landed first into Sydney, NSW and opened up the trip by attempting 10 different man vs food restaurant eating challenges around the state of New South Wales. The small businesses were mainly around Sydney and Newcastle, NSW. For food challenge #5, we headed to Hurricane's Grill in the Circular Quay neighborhood of Sydney's Central Business District (CBD), New South Wales, Australia, so we could each attempt Hurricane's Grill's newer Rib-Diculous South African BBQ Ribs Challenge. Our friend James Webb @jwebbycaneat was the only previous challenge winner, and we were both trying to join James up on the Wall of Fame. The challenge platter includes 2 full racks of juicy fall-off-the-bone Australian beef ribs, weighing around 2 kilograms total with bones, plus about 750 grams of their Louisiana Hot Buffalo Chicken Wings which are so delicious!! There was also 1lb sides of chips (fries) and fried onion rings. I had just 30 short minutes to finish everything, and was trying to become only the 2nd champion to win my $115 AUD (~$80 USD) barbecue ribs challenge meal free plus a spot on the Circular Quay location's Wall of Fame. Normally, everyone pays for the meal whether they win or lose, but winners get free BBQ ribs from Hurricane's Grill for 1 year. BIG thanks to everyone with Hurricane's Grill for the wonderful food, drinks, and hospitality!! Special thanks also to all the wonderful people from around Sydney's Central Business District area who came up that Friday evening to watch and meet us!! We appreciate everyone in New South Wales and around Australia who watches videos and supports our hard efforts!!
