Meat Paradise in Romania at Ferma Dacilor ( - During my trip to Romania, we went to a place called Ferma Dacilor, one of the most unique and special meals and food experiences of my trip to Romania. The entire concept is straight farm to table, where nearly everything they serve, from the meat to the vegetables and seasoning, are grown, produced, and aged, on location at the farm.
Medieval BBQ Cooking - Not only is the food fresh and local, but they strive to cook things in the ancient way, they way their ancestors cooked - over fire, rustic, iron, and huge portions of Romanian food.
Along with the 110 KG pig they roasted whole, one of the highlights for me was trying Mangalica pig, a type of hairy pig that almost looks like a sheep. The fat is said to be quite healthy, with little to no cholesterol. The meat was fatty and delicious.
Huge thank you to Cornelo and his entire family for hosting us and for making our time at Ferma Dacilor so memorable. One of the best Romanian food experiences!

Oropesa, the Peruvian capital of bread
One of the most recognized breads is Chuta, a large, round, disc-shaped bread with a sweet taste. The name of this bread in Quechua language is sonqosapacha, which translates as with a big heart. A recipe that mixes Andean mysticism and colonial customs, the Chuta bread is unique because it is made with the water from the Apu Pachatusan that descends through the archaeological park of Tipon and finally arrives in Oropesa with the blessing of the Virgin of Carmen.
Oropesa is the bakery city of Cusco. A town in which baking has become an art form. Mysticism, tradition and love converge in the elaboration of these Andean breads present on the tables of the Peruvians.

How to Make Braided Bread
Best braided bread you have ever tried. This bread is one of my family's old recipes. The final baked bread is soft and flavorful. I remember my mother baking braided bread on the weekends to share at our church. It goes well with garlic butter sauce and you can also use it for making sandwiches, toast, or croutons for your favorite soups.
Ingredients:
9 cups of all-purpose flour
3 eggs
2 cups of warm milk
2 tablespoons of dry active yeast
2 tablespoons of granulated sugar
1.5 tablespoons of salt
2 tablespoons of corn oil + a splash when kneading

Inside El Pica 1 in Texcoco, Mexico, the original barbecue of the Americas is still being cooked low and slow inside of pit ovens. The restaurant’s lamb barbacoa recipe starts with wrapping lamb in long maguey leaves, and cooking it overnight for 11 hours to create a tender barbacoa full of sweet and smoky flavors. The restaurant sells around 500 pounds of barbecue every weekend for $10 a pound, serving nearly 1,200 people in two days.

Tuh’u. Lamb leg meat is used. Prepare water. Add fat. Sear. Add in salt, beer, onion, arugula, cilantro, samidu, cumin, and beets. Put the ingredients in the cooking vessel and add crushed leek and garlic. Sprinkle the cooked mixture with coriander on top. Add suhutinnu and fresh cilantro.
MODERN RECIPE
INGREDIENTS
- 1lb (450g) Leg of Lamb Chopped into bite size pieces.
- 3-4 Tablespoon Oil or Rendered Fat
- 1 ½ teaspoons Salt
- 2 Cups (475ml) Water
- 12 oz (350ml) Beer - (A sour beer and German Weissbier are recommended, but any non-hoppy beer will suffice)
- 1 Large Onion Chopped
- 2 Cups Arugula Chopped
- 3/4 Cup Cilantro Chopped
- 2 Teaspoons Cumin Seeds crushed
- 2 Large Beets (approx. 4 cups) Chopped
- 1 Large Leek Minced
- 3 cloves Garlic,
- 1 Tablespoon Dry Coriander Seeds
- Additional Chopped Cilantro for garnish
- Samidu* (Something akin to 1 Persian Shallot)
- Suhutinnu* (Something akin to Egyptian Leek for garnish)
*These ingredients have no definite translation; the shallot and leek are the best guesses of scholars at Yale and Harvard Universities)
METHOD
1. Add the oil/fat to a large pot and set over high heat. Sear the lamb for several minutes in the oil until lightly browned.
2. Add the onions and let cook for 5 minutes, then add the beets and let cook for 5 minutes. Then add the salt, beer, arugula, cilantro, samidu (shallot) and cumin and bring to a boil. Mash the garlic into a paste and mix with the leek, then add to the pot.
3. Lower heat to medium and let simmer for approximately 1 hour, or until the beets and meat are cooked to your liking.
4. Once cooked, dish it into a bowl and sprinkle with coriander seeds. Garnish with fresh cilantro and suhutinnu (leek)
