How To make Irish Curd Cake
CRUST:
1 x Shortbread; See Recipe # 22
CHEESECAKE:
2 c Cottage Cheese
3 tb Sugar; Granulated
1 tb Butter; Softened
1/2 ts Lemon Rind; Grated
1/2 ts Lemon Juice
3 ea Eggs; Large, *
SUGAR GLAZE:
2 tb Confectioners' Sugar
2 tb Butter; Melted
2 tb Unbleached Flour
* September 2 of the eggs and leave 1 whole. Preheat the oven to 350 degrees F. Press the cottage cheese through a sieve. In a large mixing bowl, beat together the cheese, sugar, butter, lemon rind, lemon juice and 2 large egg yolks. Beat the 2 egg whites until they form stiff peaks and then blend them into the cheese mixture. Beat the remaining egg, then use it to paint the crust to prevent to prevent sogginess. Mix any remaining beaten egg with the sugar, butter and flour to make the glaze. Pour the cheese mixture into the prepared crust then pour the glaze over the top. Bake the cake for about 35 minutes, or until the top is golden. Cool to room temperature and serve.

An old favourite in our house and a great way to use up a jar of lemon curd. The cake itself is really straightforward and simple and a great summer dessert!
Here’s what you’ll need to make it:
100g caster sugar
110g butter, at room temperature
100g plain flour
1 heaped tsp baking powder
2 large free range eggs
Zest of 1 lemon
1 tsp vanilla bean paste
340g jar lemon curd

250g of crushed digestive biscuits
100g of melted butter
Cheese filling:
500g of creme fraiche
400g of cream cheese
180g of icing sugar
1 large vanilla pod
Peel of 1 medium sized lemon
Juice of half a lemon
7 x 1.7g gelatin sheets (platinum)
250ml of whipping or double cream
*Note - You can use a 1/2 tsp of gelatin powder per 1.7g sheet. So 3 1/2 tsp total
Lemon curd:
1 large egg
60g of sugar
60g of lemon juice
60g of butter
3/4 sheet of gelatin (platinum)
Cheese Cream:
75ml of whipping cream
75g of cream cheese
1 tbsp of icing sugar

1 3/4 stick of Philadelphia cream cheese
1 1/2 cups of icing sugar
1 large vanilla pod
Peel of 1 medium sized lemon
Juice of half a lemon
7 x 1.7g gelatin sheets (platinum)
1 cup of whipping or double cream

1/2 stick of butter
3/4 sheet of gelatin (platinum)

1/3 a cup of whipping cream

Ingredients :
For making cake:
Lemon juice 3 tsp
Maida 2 cups(240ml each)
Milk 3/4 glass
Sugar powder 1 1/2 cup
Egg 3 nos
Vannilla essence 1 tsp
Sunflower oil 1/2 cup
Baking powder 1 tsp
Baking soda 1/2
salt 1 pinch
For cake decoration:
Lemon juice 1 glass
Strawberry crush as required
fresh strawberry
White chocolate
Cornflour 3 tsp
Egg white for merangue preparation
Butter 250 gms
Sugar 1/4 cup for making sugar syrup
