ROGAN JOSH
Preparation time 10 minutes
Cooking time 40-45 minutes
Serve 2-4
Ingredients
For Rogan
2 cups Water, पानी
2-4 Coxcomb, मावल फूल
For Tempering
2-4 tbsp Mustard oil, सरसों का तेल
2-3 no. Black cardamom, बड़ी इलायची
4-5 Black peppercorns, काली मिर्च के दाने
2-3 Cloves, लौंग
1 kg Mutton (with bones), मटन
Prepared Curd Mixture,तैयार किया हुआ दही मिश्रण
Salt to taste, नमक स्वादअनुसार
⅓ cup Prepared Rogan, तैयार किया हुआ रोगन
1 tbsp Red chili paste, लाल मिर्च का पेस्ट
1 tbsp Brown onion paste, तले हुए प्याज का पेस्ट
For Curd Mixture
1 cup Curd, beaten, दही
1 ½ tsp Fennel powder, सौंफ का पाउडर
1 tsp Dry ginger powder, सौंठ
5-6 Saffron strands, केसर
1 tsp Coriander powder, धनिया पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Rogan
In a handi, add water as required, Cockscomb, close the lid and boil it for a while.
Strain it in a bowl with the help of muslin cloth and keep it aside for further use.
For Tempering
In a handi, add mustard oil, once it's hot, add black cardamom, black peppercorns, cloves and let it splutter.
Add mutton and saute it for 6-7 minutes or until tender on medium flame.
Add prepared curd mixture, salt to taste, close the lid and cook it for 8-10 minutes or until the mutton is tender.
Add prepared rogan, red chili paste, brown onion paste and let it simmer for a while.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with rice.
For Curd Mixture
In a bowl, add curd, fennel powder, dry ginger powder, saffron strands, coriander powder, degi red chili powder, turmeric powder and mix it well.
Keep it aside for further use.

Ingredients for Mutton Rogan Josh:
- Mutton/Lamb - 1 kg (tender pieces with bones)
Whole Spices & Tempering:
- Asafoetida (Hing)- 1/2 tsp
- Cumin Seeds- 1 tsp
- Cloves- 6-7
- Green Cardamom, crushed- 5-6
- Black Cardamom, crushed- 2
Spice Powders:
- Kashmiri Chilli Powder- 6 tsp
- Saunth (Dry Ginger Powder)- 3/4 tsp
- Saunf powder (Fennel Powder)- 4 tsp
- Garam Masala Powder- 1 tsp
- Green Cardamom (Elaichi) Powder- 1/4 tsp
Other Ingredients:
- Whisked Curd/Plain Yogurt- 200 ml
- Salt- 2 tsp
- Mustard Oil- 6 tbsp
Preparation:
- Wash & drain the meat.
- Whisk the curd/plain yogurt.
Process:
- Heat mustard oil in a pan till smoking point. Once the oil heats up and emits smoke switch it off and let it cool.
- Again heat it and then add the cumin seeds and the cloves. Also add the asafoetida. Give a mix for 15-30 secs and then add the mutton pieces.
- Mix and sear (bhunno)on high heat for 1 min and then add the crushed green and black cardamom.
- Give a mix and then continue to fry on medium heat for 4-5 mins till the meat is browned.
- Add the salt and Kashmiri Chilli Powder and mix it well.
- Cook on low heat for 3 mins for the meat pieces to absorb the colour.
- Now add the Dry Ginger Powder & Fennel Powder, mix and fry it on low to medium heat for 3 mins till oil separates.
- Add the whisked curd/plain yogurt on low heat. Keep stirring and cooking on low heat for 2-3 mins till oil separates.
- Add the Garam Masala Powder, give a mix and cook for 2 mins.
- Now add 450 ml water and allow it to come to a boil.
- Reduce heat to low and cook covered on low heat for 45-60 mins till meat is tender.
- Open the lid and give it a stir few times in between.
- Once done, add the Green Cardamom Powder, give a mix and simmer for 2-3 mins.
- Serve with rice or roti.

Ingredients:
400gm Mutton
3 tbsp Mustard Oil
3-4 Black Cardamom
Few Cloves
2 Cinnamon stick of 2’’
Few Green Cardamom
1 tsp Hing / Asafoetida
2 tbsp Ginger – Garlic Paste
2 tbsp Kashmiri Red Chilli Powder
Water
500ml Mutton Stock
1 cup fried Onions
1 tsp Turmeric Powder
1 cup Tomato Puree
1 tsp Coriander Powder
1 tsp Kashmiri Saffron
Salt to taste
1 tbsp Ghee
1 tsp dry ginger Powder
1 tsp Fennel Seed Powder
Few Juliennes of Ginger
Method:
Take a deep pan. Put some mustard oil and then add all the whole spices. Once it turns aromatic, put the mutton pieces and sauté it till it is slightly golden brown in colour. Put hing at this stage. Now take a bowl, add ginger garlic paste and Kashmiri red chilli powder and mix it together along with some water to make it a nice watery mixture. Add this liquid mixture in the mutton and then put the mutton stock. Then add fried onions and turmeric and mix everything together. Cover with a lid and let the mutton boil till 80%. At this stage add tomato puree and coriander powder and mix well. Again cover it and let it boil for 10-15mins. Now take a big bowl, take out the mutton pieces from the pan and put them in the bowl. Take a strainer and put the mutton gravy onto it and with the help of a spoon-back, strain all the liquid portion of the gravy. Now put this liquid strained gravy along with mutton pieces back into the pan. Now add saffron and mix well. Then add salt and ghee along with the ginger powder and fennel seed powder. Now combine everything well together and then finally add some ginger juliennes. Let it cook for another few minutes and your delicious Rogan josh is ready. Relish this authentic and awesome dish with anything you want and enjoy.
