How To make Kentucky Griddle Cakes
1 c Yellow Cornmeal
1/2 c All Purpose Flour
1 t Sugar
3/4 ts Salt
1/2 ts Baking Powder
1/2 ts Baking Soda
1 c Buttermilk
1 lg Egg
2 tb Vegetable Oil
1 c Maple Syrup, Warmed
Mix the cornmeal, flour, sugar, salt, baking powder and baking soda in a medium size bowl. Combine the buttermilk, egg and oil in a small bowl. Stir the buttermilk mixture into the cornmeal mixture just until well blended (the batter will still be slightly lumpy). Lightly oil the griddle or large frying pan. Heat over medium high heat until a drop of water will dance across the surface. Stir the batter and drop a test cake ( 1/4 cup of batter) on the griddle. Cook until the bubbles burst on the top surface and the bottom is light brown. Turn and cook the other side until it is browned (1-2 minutes). (Add more buttermilk to the batter if the first cake does not spread well.) Serve the griddle cakes with the warm syrup.

1/4 cup of Unbleached Flour
1 tsp Baking powder
1Tbsp Organic Sugar
1/2tsp Sea Salt
2 cups hot water

Cracklin CornBread Cooked on the Griddle
Cracklin CornBread Recipe
Using a food processor chop up the Cracklins into small pieces but not a powder.
Mix the dry ingredients:
2 Cups Stone Ground Cornmeal
1.75oz (50 grams) Pork Cracklins
2 teaspoon Baking Powder
1 teaspoons Baking Soda
1 teaspoon Salt
Mix the wet ingredients:
1 Cup Buttermilk
1 Egg
4 Tablespoons Melted Butter
If needed add more buttermilk so that the corn meal just comes together. Form into cakes.
Put cakes onto a hot griddle and cook until crispy on both sides and done in the middle.

Johnny Cakes, Hoe Cakes, Journey Cakes, Shawnee Cakes, Johnny Bread, and Spider Cornbread are all names of the same bread. This recipe dates back to before the first American colonies. It is believed that this recipe was given to the early settlers by the Native Americans. Give these a try. They're very inexpensive to make, they're quite tasty, and they're gluten free!
Ingredients:
