How To make Lamb Shish Kebab
Ingredients

green peppers

each
yellow onions

pound
leg of lamb, or shoulder of lamb, cut into 1 1/2 inch cubes
1/2
cup
olive oil
1/2
teaspoon
oregano
1/2
teaspoon
dried mint OR 1 tb fresh mint
2
each
garlic cloves, crushed
1
tablespoon
light soy sauce
Directions:
Cut the green peppers first in halves and then in thirds the long way. Remove the seeds and cut each piece across. You now have 12 squares of green pepper.
Peel the yellow onions and cut in half across the middle. Cut each piece in quarters. Peel the layers so that you have 6 pieces about the same size as the green pepper squares.
Place the green peppers and onions in a large mixing bowl along with the lamb. Make a sauce of the olive oil, oregano, mint (more if fresh mint), garlic and soy sauce. Mix well, and pour over the meat and vegetables. Mix well again and let sit for 3 hours.
Arrange on skewers in this order: onion, meat, green pepper, meat, onion, meat, green pepper, meat. End with an onion. Grill until lightly browned on all sides, approximately 15 minutes (don't overcook).
Notes: These can also be broiled in the oven. You can substitute good beef cubes for the lamb and it still is one of the best!

80ml onion juice (roughly 1 large onion strained)
100ml whole milk
3 Tbsp olive oil
2 Cloves of Garlic
30g Red Pepper Paste - or tomato paste
1 Tsp salt (If you are doubling or tripling the recipe, make sure you do not exceed exactly 1 tsp per 500g, everything else can be rough except the salt)
1/2 Tsp Pul Biber or Aleppo Pepper
1 Tsp oregano
1/2 Tsp black pepper

Ingredients:
2 lb Ground Lamb - You can also use Chicken or Beef
1 Tsp Salt
1 Tsp Chili Powder
1 Tsp Coriander Powder
1 Tsp Cumin Powder
1 Tsp Garam Masala or 7 spices (Optional)
1 Tsp Chili Flakes (Optional)
1 Tsp Ginger & Garlic paste
1 Onion - Finely chopped
2-3 Green Chilies - Finely chopped
Cilantro - Finely chopped
Tips:
Be sure to chop the veggies very finely. The kebabs will be difficult to shape otherwise.
Add 1-2 Tbsp of all purpose flour to your mixture if the kebabs are too soft to shape.
You can marinate your mixture if you would like. Keep in mind, the longer the mixture marinates the softer it gets (harder to shape)
Sprinkle with lemon juice and serve with Yogurt and Mint sauce...

Follow my recipe to learn how to make my simple and easy home made lamb seekh kebab's also known as kabab in other parts of the world. They are a popular Indian appetizer typically eaten with a side of green chutney and naan or pitta bread. These flavourful bites of lamb are made with freshly ground whole spices and are either typically cooked in a tandoor oven or shallow fried like I have done. These are perfect as a starter or a main with naan bread and salad, you'll keep coming back for more.

Takes approx. 20 mins to make after the initial 30 min meat marination and makes 16-18 kebabs
Ingredients:
500g lamb mince (20% fat)
1 medium onion
4 green chillies (optional)
good handful of fresh coriander
1 teaspoon of:
salt
chilli powder
coriander powder
garam masala and cumin seeds
1/2 teaspoon turmeric powder
oil to shallow fry
16/20 6inch bamboo skewers
