1 tsp olive oil
1/2 c onions
chopped
2 cloves garlic :
minced
1 c bell peppers chopped
1 1/2 tsps oregano
1 1/2 tsps cumin
1 1/2 tsps chili powder
1 tsp salt
1/2 tsp black pepper
14 1/2 ozs chicken broth
15 1/2 ozs great northern beans :
drained and washed
16 ozs dark red kidney beans drained and washed
14 1/2 ozs crushed tomatoes :
undrained
16 ozs pumpkin
2 1/2 c turkey light meat, skinless -- cooked and cubed
1/2 c water
Heat oil in a saucepan over medium heat. Add onions, garlic, bell peppers, oregano, cumin, chili powder, salt, and black pepper; cook until vegetables are tender. Stir in chicken broth, beans, tomatoes, pumpkin, turkey, and water. Bring to a boil, stirring occasionally. Simmer 45 minutes over low heat.

Turkey Pumpkin Chili
Yields: 6 to 8 servings
Ingredients:
1 tbsp. olive oil
1 cup onion, chopped
1 green pepper, chopped
1 tsp. minced garlic
1 lb. ground turkey
2 (14.5oz.) cans of Mexican style diced tomatoes
1 (15oz.) can pumpkin puree
1 (15oz.) can black beans, drained and rinsed
1 cup frozen corn, thawed
2 cups chicken broth
2 tbsp. chili powder
1 tbsp. cumin
1 tsp. pepper
2 tsp. salt
½ cup Cheddar cheese
½ cup sour cream
Preparation Directions:
~ Heat oil in a large skillet; sauté onion, green pepper and garlic until tender. Stir in turkey and cook until turkey is no longer pink. Drain, if necessary. Add in tomatoes, pumpkin, black beans, corn, and chicken broth.
~ Season with chili powder, cumin, pepper and salt. Reduce heat to low and simmer for 20 minutes.
~ To serve; ladle into bowls, top with Cheddar cheese and sour cream.

Cooking Healthy with Coastline Turkey Pumpkin Chili
This a great fall/winter dish!!!
Ingredients
1/2 medium onion chopped
1 tablespoon olive oil
3 cloves garlic minced
1 pound lean ground turkey (I used turkey thigh)
1 small green bell pepper chopped
1 (14 fluid ounce) can diced tomatoes with juices
1 (14 fluid ounce) can pumpkin puree
1 (14 fluid ounce) can white (cannellini) beans drained
1 (14 fluid ounce) can red kidney beans drained
2 tablespoons chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/4 teaspoon dried oregano
1/2 teaspoon cayenne pepper optional
1 cup chicken broth
Salt & pepper to taste
Garnish (optional): Tex-Mex cheese blend, cilantro, sour cream/Greek yogurt, avocado, etc.
Instructions
In a soup pot over medium-high heat, sauté the onion with the olive oil for 5 minutes.
Add the garlic and ground turkey and continue cooking, breaking the meat up with your spoon, for another 5 minutes.
To save time, during steps 1 and 2 I like to prep the other ingredients since you only need to stir periodically.
Add the remaining ingredients to the pot and give it a good stir. Increase the heat to high, and just when it starts to boil, reduce the heat so it's simmering. Cook the chili for 10-15 minutes, stirring periodically.
Serve as-is or with desired toppings.
