INGREDIENTS:
Crust:
1.5 cups of flour
1/2 tsp of baking powder
1/3 tsp of salt
1/2 cup of melted vegan butter/margarine/coconut oil
2 tbsp of sugar
1/4 cup of water
Cream:
Juice from 2 lemons
Lemon zest
1/2 cup of sugar
400ml coconut milk
1 vanilla pudding or 4 tbsp of cornstarch plus a pinch of turmeric
1/2 cup of frozen or fresh blueberries

My lemon blueberry dump cake recipe with 3 ingredients is easy and delicious! Since this dessert is so flavorful and easy to make, it would be ideal for beginner cooks who need to feed a crowd for a holiday like the 4th of July.
In addition to the great taste, this recipe is also very easy: as the name suggests, all you have to do is dump blueberry pie filling, lemon cake mix, and butter into a 9x13 pan and then bake. Although you can make this simple dessert is just 3 ingredients, I highly recommend also adding lemon zest and juice to enhance the flavor.
Like I said, I really liked how this turned out. In fact, I thought it had more blueberry flavor than the plain blueberry dump cake I made last summer: I think that the extra lemon enhanced the berry flavor.
My only two critiques are that the filling was a bit runnier than I was expecting. That's not necessary a bad thing: if you serve this with vanilla ice cream, I'm sure that drizzling some of the extra blueberry syrup over the ice cream would be delightful.
Also, even though this was definitely good, I felt like the blueberry flavor was strong than I was expecting. If you want to balance out the flavors more, I suggest adding a 21 oz can of lemon pie filling in addition to the 2 cans of blueberry--that would be great!
All in all, I thought this lemon blueberry dump cake with 3 ingredients recipe turned out great. It would be the perfect simple summer dessert for after a barbecue or picnic, and it would be especially perfect as the blue dessert on a red, white, and blue dessert table for the 4th of July.
