How To make Lemon Tarragon Chicken
2 tb Butter
8 Chicken breast halves;
- boneless, skinless 2 c Fresh mushrooms; halved
2 Garlic cloves; minced
3 tb Dry sherry
1/2 tb Dried tarragon; crushed
1/2 tb Lemon pepper seasoning
1 cn Chicken broth
1/3 c All-purpose flour
1/4 c Sour cream
Egg noodles; cooked, hot Fresh lemon slices In a 12" skillet melt butter over medium-high heat. Add chicken, mushrooms, garlic, sherry, tarragon, and lemon-pepper seasoning. Cook, uncovered, for 10-12 minutes or until chicken is no longer pink, turning once. Remove chicken and mushrooms with a slotted spoon. In a screw-top jar combine chicken broth and flour; shake until blended. Add mixture to the skillet. Cook and stir over medium-high heat until thickened and bubbly. Remove about 1/2 cup mixture from skillet and stir into sour cream. Return to skillet along with chicken and mushrooms. Heat through (do not boil). Serve over hot cooked noodles. Garnish with lemon slices, if desired.

Creamy Tarragon Chicken | Serves 4
FULL RECIPE POST:
INGREDIENTS
2 large Chicken Breasts, brought close to room temp (approx 9oz/250g each)
3/4 cup / 180ml Heavy/Double Cream, at room temp
3/4 cup / 180ml Chicken Stock
1/4 cup / 60ml White Wine (see notes)
1/4 cup / 20g freshly grated Parmesan
2 Shallots, finely diced
2 cloves of Garlic, finely diced
1 tbsp finely diced Fresh Tarragon, plus more to serve (optional)
1 tbsp Olive Oil
1 tbsp Butter
1/2 tsp Salt, plus more to taste
1/4 - 1/2 tsp Black Pepper, plus more to taste
METHOD
Slice your chicken breasts right through the centre to make 4 even sized breasts. Rub 1/2 tsp salt and 1/4-1/2 tsp black pepper into the meat.
Add 1 tbsp butter and olive oil to a large pan over medium-high heat. Add chicken breasts and fry both sides until golden, with the centre cooked right through. Remove and place to one side. Lower heat to medium.
Add in shallots and fry until they begin to soften/brown, then add garlic and fry for another 1-2mins. Pour in wine and use your wooden spoon to scrape off any flavour stuck to the pan. Simmer until the wine reduces right down. This is important to burn off the alcohol.
Pour in stock and cream, then add 1 tbsp finely diced fresh tarragon. Turn heat to low and gently simmer for 5mins, or until the sauce starts to thicken slightly. Stir in parmesan then add salt & pepper to taste. Give it a final stir and simmer for another couple of minutes until the sauce thickens.
Add chicken back to the pan and coat in the sauce. Sprinkle over a pinch more tarragon (optional) then serve up with potatoes and veg of choice!

Lemon Tarragon Chicken Salad Recipe
The BEST Chicken Salad for all your sandwiches. This one is spiked with lemon and tarragon for a fresh, light flavor.

Ingredients
4 cups cooked chicken breast, chopped
▢ 1/2 cup chopped celery
▢ 1/4 cup minced red onion
▢ 1/4 cup chopped fresh parsley
▢ 2 tablespoons chopped fresh tarragon
▢ 1 tablespoon fresh lemon zest
▢ 3/4 cup mayonnaise
▢ 3 tablespoons fresh lemon juice
▢ 1 tablespoon honey
▢ 1/2 teaspoon kosher salt
▢ 1/2 teaspoon fresh ground pepper
▢ 4 Sandwich Buns, if desired
▢ Leaf lettuce, if desired
Instructions
In a large bowl, toss together the chicken, celery, red onion, parsley, tarragon and lemon zest. Set aside.
In a small bowl, whisk together the mayonnaise, lemon juice, honey, salt and pepper. Pour the dressing over the chicken ant stir to combine.
Divide the chicken salad evenly among the bottom half of the rolls and top with lettuce, if desired. Place the top half of the roll on the sandwich and serve immediately.
