How To make Lemonade Wafers
3/4 c Butter-flavored shortening
3/4 c Sugar
1 ts Lemon peel; grated (opt)
1/4 c Lemon juice
1 1/3 c Flour
1/4 ts Salt
1/4 ts Baking powder
1/4 c Coconut; shredded (opt)
Preheat oven to 350-degrees. Combine shortening and sugar in medium bowl. Beat at medium speed of electric mixer until light and fluffy. Add lemon peel & juice. Blend well. Combine flour, salt and baking powder. Add to lemon mixture at low speed until just blended.Drop dough by level measuring tablespoonfuls 2 inches apart onto ungreased baking sheet. Sprinkle top with coconut, if desired. Bake for 8 to 10 minutes or until cookies are set and edges are golden brown. Watch closely so that coconut does not burn. Cool 2 minutes on baking sheet before removing to cooling rack. Cool completely. -----

**If you are making this delicious dessert to take to a gathering, use parchment paper to the bottom of your dish, for a cleaner presentation ????get creative and top it with some fresh lime/lemon slices and some whipping cream!
Allow it to set overnight or for at least 6 hours ????
ingredients: make sure your lime/lemon juice is equal to 3/4 cup ????
1 1/2 pack Galletas Marias( Mexican Cookies)
6 limes
2 lemons
1 tsp Mexican vanilla extract
1 can evaporated milk
1 can sweetened condensed milk
1 can media crema (table cream)
8 oz cream cheese at room temperature
