BBQ SAUCE
1/4 cup Brown sugar 2 tb Paprika chile powder 2 ts Salt 2 ts Dry mustard 2 Bay leaves 1/2 t Chili powder 1/4 t Cayenne pepper 1/4 c Worcestershire sauce 1 lime juice 2 c orange juice 1/2 c Catsup 1 c Water 2 cloves garlic :
chopped 1 onion -- chopped fine Marinate ribs overnight. Steam for 1 hour before grilling. Mix all sauce ingredients in large saucepan. Bring to boil over high heat. Simmer until slightly thickened, about 30 minutes. Discard bay leaves. Use the sauce to mop the ribs and at the table, for dipping.

Recipe: Rub - Combine 1 1/2 cups brown sugar, 1 Tbsp garlic powder, 1/2 Tsp cayenne, 3/4 tsp chili powder, 1 tsp paprika, 1 tsp salt and pepper to taste. Rub on all sides of ribs well. Cover and chill overnight or at least 5 hours. BBQ Sauce: I used Not Ketchup brand. A link is in the video for a BBQ Pork Sandwich video on how to make a good BBQ Sauce. Recipe for that sauce follows. BBQ Sauce: ***Double for a full rack of ribs. 1 1/2 Tbsp oil 3 garlic cloves, minced 1 cup water 1 cup ketchup 1/4 cup apple cider vinegar 1/4 cup brown sugar, firmly packed 1 Tbsp tomato paste 1/2 tsp cloves 1 tsp paprika 1 tsp chili powder 1 tsp all spice 1 Tbsp molasses 1/8 cup Worcestershire sauce 1/8 cup low sodium soy sauce Directions: Saute garlic in oil on medium/low heat for 1 minute Add tomato paste and spices. Cook on low while stirring to blend for approximately 1 minute. Add remaining ingredients and cook on med/low heat approx. 30 min. until thick. Bake ribs on 350 for 1 hour then increase heat to 375 for 1 hour. Baste ribs during the last hour of baking. Enjoy!
