How To make Lisa's Best Pumpkin Bread
3 1/2 c All-purpose flour
2 ts Soda
1 ts Salt
1/2 ts Baking powder
3 c Sugar
1 ts Cinnamon
1 ts Pumpkin pie spice
1/2 c Cooking oil
4 Eggs, or equivalent egg
-substitute 2 1/2 c Canned pumpkin
1/4 c Water
In a large mixing bowl combine the flour, soda, salt, baking powder, sugar, cinnamon, and pumpkin pie spice. In a seperate bowl, mix by hand the oil, eggs, pumpkin, and water. Combine with the dry ingredients. Bake in loaf pans in a 350 oven for 1 hour. Source: Lisa Clarke, based on a recipe from the Seascape Bed and Breakfast, Springlake, Michigan, as it appears in "The American Country Inn and Bed & Breakfast Cookbook Volume One" by Kitty & Lucian Maynard. Notes: 09/21/96 - can also be baked for 50 minutes in 8 little loaf pans. This recipe has gotten rave reviews. Good served with Spiced Apple Butter.

I'm so pleased to be sharing this recipe with you all today. This CARIBBEAN dessert is packed with flavours and it has a unique texture, Cassava Pone. Please enjoy!
Ingredients:
4 cups grated cassava / Yuca
2 cup grated coconut
1 cup grated pumpkin
1 cup coconut milk
1 cup carnation milk
1 tbsp vanilla essence
1 tbsp grated ginger
1 tsp cinnamon powder
1 cup sugar
2 tbsps melted unsalted butter
Pinch of salt
*Bake @ 180 Degrees Celsius or 350 Degrees Fahrenheit for 1HR 50 Minutes. Oven time may vary.

I know a lot of you have been waiting on this recipe and I'm sorry it took so long but i wanted it to be perfect! Recipe-
Dry-
1.5 cup spelt flour(can be subbed for buckwheat or gluten free alternative)
1.5 cup oat flour
1/2 cup oats
2 tsp cinnamon
1/2 tsp salt
1/3 tsp nutmeg
dash of ginger
2 tsp baking powder
1 tsp baking soda
Wet-
3/4 cup maple syrup
1.5 cup pure pumpkin puree
1/2 cup(or more) plant milk
1 flax egg(1 tbsp ground flax and 3 tbsp water soaked for 5 min)
2 tsp pure vanilla extract
OPTIONAL(but highly recommended)- chocolate chips, nuts, seeds, etc.
Directions-
preheat over to 350. combine all wet ingredients except the milk in a bowl and set side while combining the dry ingredients. pour the wet mixture into the dry and add the milk little by little until the batter is smooth and thick. Cook for about 20-30 minutes then cover with tin foil and cook an additional 20-30 minuted depending on your oven
Enjoy warm with nut butters, banana, plant milk, or by itself! the perfect snack for cold days!

1. Combine dry ingredients in a large bowl. In another bowl whisk eggs, pumpkin, oil, & water. Combine wet with dry ingredients. Pour into greased loaf or muffin pans.
2. Bake at 350° for 50-60 minutes. Cool for 10 minutes before removing from pans.

Pumpkin soup is a usually 'bound' soup made from a purée of pumpkin. It is made by combining the meat of a blended pumpkin with broth or stock. It can be served hot or cold, and is a popular Thanksgiving dish in the United States. My today's recipe is pure vegetarian no meat or chicken added in it.
