Healthy Blueberry Muffins???? This recipe is gluten-free, refined sugar-free & dairy-free! These muffins are so moist and super delicious????

This recipe makes about 10 muffins
•
Ingredients
2 mashed bananas
2 eggs
1/4 cup peanut butter (60 ml)
1/3 cup gluten-free oat/almond flour (80 ml)
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup blueberries fresh/frozen (240 ml) (I used wild blueberries)

1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Fold in the blueberries
4. Spoon to muffin pan lined with muffin liners
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 15-20 minutes
6. When the muffins have cooled a little bit, transfer them to a wire rack and let cool and enjoy! (Store in an air-tight container)

BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour the milk mixture over the oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
Recipe Notes
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.

Healthy Sweet Potato Muffins Recipe | Paleo Muffin Mix
These muffins are so moist and delicious and satisfying. If you love to eat muffins but don’t want a muffin top hanging around your waist, you’re gonna want to chomp down on this! I used a Paleo flour blend to replace the wheat flour that can so easily bloat us. Paleo flour is also lower in carbs. I also reduced the brown sugar to be used by incorporating date sugar. This is a healthier alternative to regular muffins and tastes better, too. Enjoy your muffins, friends!
RECIPE
1 cup baked sweet potato
⅓ melted butter
¾ cup brown sugar
¼ cup date sugar
1 beaten egg
1.5 cups Paleo baking flour:
1 tsp vanilla extract
1 tsp baking soda
Sprinklings of nutmeg and cloves
Pinch of salt
DIRECTIONS: Combine dry ingredients, then add in wet ingredients. Mix all well. Line muffin tins with cupcake liners and bake at 375 degrees for 24 - 27 minutes. Yields 8 muffins.
NOTES: If you do not have Paleo flour (although highly recommended) use regular flour, but be aware the carbs will be higher. If you do not have date sugar, increase brown sugar to 1 cup.
