persimmon pulp (do not sieve)

teaspoon
baking soda

egg whites
1/2
cup
applesauce
1
cup
currants
1/4
cup
almonds, optional, chopped
Directions:
Combine dry ingredients except baking soda. Add baking soda to persimmon pulp and beat in egg whites. Add dry ingredients to persimmon pulp, stir in applesauce currants, and almonds. Make drop cookies. Place on a cookie sheet sprayed with a nonstick product.
Bake at 375 degrees for 15 to 20 minutes.

Ingredients:
- 280 grams of yogurt (1+1/4 cups)
- 2 eggs
- 1/4 teaspoon salt
- 120 grams of sugar (2/3 cup)
- 1/2 teaspoon vanilla extract
- 70 grams of melted butter
- 220 grams flour (1+1/4 cups)
- 1 teaspoon baking powder
- 300 grams of persimmon (2 pcs.)

Persimmon Cookies

INGREDIENTS
For the cookies:
1 cup very ripe persimmon pulp
1/2 teaspoon baking soda
1/2 cup white granulated sugar
1/2 cup brown sugar
1/2 cup (4 oz, 1 stick) unsalted butter, at room temperature
1 teaspoon vanilla extract
1 egg
1 teaspoon grated orange zest
2 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon ground cloves
1 cup chopped nuts
1 cup chopped dried cranberries, raisins, or dates
For the glaze:
2 cups confectioner's sugar
2 Tbsp orange juice
1 Tbsp persimmon puree
1 tsp grated orange pee

Oatmeal is one of the most nutritious meals to start off your day. People love to put fruit on top of their hot cereal and your choice can be the persimmon, since its in season. This recipe below can serve 2 or 1.
Ingredients:
* 1 cup rolled oats
* 1 cup filtered water
* 1 cup almond milk
* 1/4 cup medjool date paste or 3 to 4 chopped dates
* 9 walnut halves
* Fuyu persimmon
Directions:
Put your rolled oats into a cooking pot and pour the water and almond milk into it. Set the heat to medium low and when simmering, stir it every now and again. Add the medjool date paste and stir in until well encorporated. Alternatively, just throw in your chopped dates or blend in the almond milk first and then put it in the pot. You choose.
Lastly, chop up your walnuts and slice your persimmon. Put your finished hot oatmeal into a serving bowl and place your almonds and sliced persimmon on top. Enjoy!
