Magiritsa Soup
1 kg Beef Tongue
500 g Ox Liver
500 g Lamb Liver
250 g Chicken Liver
3 Leeks, 5 fresh Onions
2 large Onions, 5 Garlic cloves
1 cup fresh Dill, 1/2 cup Coriander
1 Tbsp Hemp Seed Powder
1 shot of Brandy (optional)
2 Tbsp Tapioca flour (starch)
1-2 Lemons
2 Bay Leaves, Cumin, Pepper & Salt
Method on how to prepare Magiritsa Soup:
Step 1
In a pressure cooker:
Place the Beef Tongue, the Onions, Garlic & Bay Leaves. Close & wait for it to cook. Once it has been cooked, take out of the pressure cooker & place in a cold bath (In a bowl add lots of ice with water). This will facilitate the removal of the skin from the Tongue. After you have removed the skin from the Tongue you will need to cut it in small cubes, then put aside.
The Broth:
The Broth from the Tongue we will be using to make the soup. Add an additional 1.7 litres of water to the Broth. Put aside until you have fried the livers.
Step 2
Cut all the ingredients, Lettuce, Onions, Fresh Onions, Leeks, Fresh Dill & Fresh Coriander. Then cut the Chicken Livers, Ox Liver & Lamb Liver in cubes.
Step 3
In a large pan, add Butter & Olive Oil, add the Onions, Leeks, Fresh Onions & fry for 5 minutes. Proceed by adding the spices: Hemp Seed Powder, Cumin & Pepper. Now it’s time to add the Livers & the Bay Leaves. Towards the end of frying the Livers, which will take you about 7 to 10 minutes, add the shot of Brandy & lower the heat. Take some Liver out to try to make sure they have been cooked through. Put aside & bring the big pot with the broth, proceed to step 4.
Step 4
Place the big pot with the broth on the stove & switch on to medium heat. Start by adding the Tongue which you have cut in cubes, the Lettuce & the Livers. Now you should add the Fresh Dill & Fresh Coriander. Stir well. In the meantime, prepare the Tapioca Flour Starch or Arrow Root (if you don’t have either of the ones proposed then you can add Cornflour preferably organic) with cold water & pour in the soup. This will make the soup creamier & thicker.
Step 5
It’s time to add the Lemon to the soup, for that nice lemony flavour. Stir well & add some more Salt & Pepper.
Step 6
The whole process of adding all the ingredients in the soup will take you approximately 15 to 20 minutes. I would suggest keeping the stove on medium heat. When all the ingredients have been added, you then switch off the stove & leave to cool a little bit.
Step 7
You have now reach to the point of serving yourself & well deserved as it has been a lengthy process. I hope you enjoy it as much as my family does, every year!

Μαγειρίτσα | Magiritsa, the traditional Greek style Easter soup
???????? Magiritsa
A traditional soup with sworn enemies + passionate friends, because Mageiritsa either makes them long for it or totally repulses someone, all year round! The night of the Resurrection signals the end of the Easter Lent period with a festive dinner where the “Lamb of God” in all its purity sacrificed since the start of Christianity. + Because in such cases nothing is wasted, this dinner that took care of those who returned from Easter Vigil with a warm + nutritious soup made it a tradition for the entrails to be used utilizing every part of the lamb. In many parts of Greece, the head + the bones of the legs are used for the broth, but if you do not find them available in the market, use calf bones.
For the broth
1lt water
Lamb or beef bones
Celery
1/2 Fennel
For the Magiritsa dish
100g olive oil
1 large lettuce
400g spring onions
100g leek
1 lamb liver chopped in small pieces
300g lamb entrails
Dill
Fennel
For the egg-lemon sauce
4 large egg whites
4 large egg yolks
80-100g lemon juice
Juice from Magiritsa
Start by preparing the broth. Boil all the ingredients in a saucepan over medium heat for about 1 hour. Keep the saucepan covered while you continue with the rest of the preparations + skim the surface of the water every now + then.
Meanwhile, clean the entrails well with plenty of running water. Then, hold one end of the entrails + push a straw inwards to turn it inside out + rinse it internally, again with plenty of running water. Finally, leave them in a bowl, covered with water + 80g of vinegar for about 30’, enough time to chop the liver + wash the vegetables + herbs. After that, chop the entrails in fine pieces.
In a large saucepan, sauté the chopped spring onion + the chopped liver in olive oil. Add 100ml of white dry wine or, if you want a lighter soup, add directly the broth, cover it + let it boil for approximately 15’. Add the chopped lettuce, cover + let it cook for another 5-10’ before turning off the heat.
In a mixer, prepare the egg-lemon sauce by fluffing the egg whites well. Then add the yolks one by one slowly + without stopping the mixer, add the lemon juice. Finally, add 2-3 large spoonfuls of juice from the soup to the egg-lemon sauce to gently raise its temperature. Finish by adding the mixture to the soup, together with the chopped fennel + parsley, stirring it gently, to make the Easter Resurrection wishes aroma spread even more!

Η παραδοσιακή σούπα με τους ορκισμένους εχθρούς + τους φανατικούς φίλους, που την αποζητούν όλο τον χρόνο ! Το βράδυ της Ανάστασης σημαίνει το τέλος της νηστείας του Πάσχα με ένα εορταστικό δείπνο όπου πρωταγωνιστεί ο αγνός αμνός του Θεού, που θυσιάζεται συμβολικά από καταβολής χριστιανισμού. + Επειδή σε τέτοιες περιπτώσεις τίποτα δεν λογίζεται να πάει χαμένο, το αρνάκι σουβλιζόταν + αξιοποιώντας κάθε μέρος του αρνιού, τα εντόσθια γίνονταν μια θρεπτική σούπα για όσους επέστρεφαν από την αγρυπνία. Σε πολλά μέρη της Ελλάδας, το κεφάλι + τα κόκκαλα των ποδιών χρησιμοποιούνται για τον ζωμό, αν όμως δεν βρείτε διαθέσιμα στην αγορά, χρησιμοποιήστε κόκκαλα από μοσχαράκι.
Για τον ζωμό
1lt νερό
Κόκκαλα από αρνί ή μοσχάρι
Σέλινο
1/2 Φινόκιο
Για την μαγειρίτσα
100γρ ελαιόλαδο
1 μεγάλο μαρούλι
400γρ φρέσκα κρεμμυδάκια
100γρ πράσο
1 αρνίσια συκωταριά σε ψιλοκομμένα κομμάτια
300γρ αντεράκια από αρνί,
Άνηθο
Μάραθο
Για το αυγολέμονο
4 ασπράδια μεγάλου μεγέθους αυγών
4 κρόκοι μεγάλου μεγέθους αυγών
80-100γρ χυμό λεμονιού
Ζεστό ζουμί από την Μαγειρίτσα
Ξεκινάμε από τον ζωμό, βράζοντας σε μέτρια φωτιά όλα τα υλικά για περίπου 1 ώρα. Κρατάμε το σκεύος μας σκεπασμένο + όσο ετοιμάζουμε τις υπόλοιπες παρασκευές, ξαφρίζουμε την επιφάνεια του νερού κάθε τόσο.
Εντωμεταξύ, καθαρίζουμε καλά τα έντερα, σε άφθονο τρεχούμενο νερό. Στη συνέχεια, με ένα καλαμάκι κρατάμε την μια άκρη του εντέρου σπρώχνοντας εσωτερικά για να το γυρίσουμε από την άλλη όψη + να το ξεπλύνουμε + εσωτερικά, ομοίως με άφθονο τρεχούμενο νερό. Τα αφήνουμε σε ένα μπολ, σκεπασμένα με νερό + 80γρ περίπου ξύδι, για περίπου 30’ + ψιλοκόβουμε την συκωταριά, τα λαχανικά + τα μυρωδικά μας. Τέλος ψιλοκόβουμε + τα εντεράκια.
Σε μια μεγάλη κατσαρόλα σωτάρουμε στο ελαιόλαδο το ψιλοκομμένο φρέσκο κρεμμυδάκι, την ψιλοκομμένη συκωταριά + σβήνουμε με 100ml λευκό κρασί ή, αν θελουμε την σούπα μας πιο ελαφριά, απευθείας με τον ζωμό που είναι πλέον έτοιμος + την αφήνουμε σκεπασμένη να πάρει μια βράση για 10’ περίπου. Συμπληρώνουμε το μαρούλι ψιλοκομμένο, σκεπάζουμε + του δίνουμε 10’ ακόμα για να σβήσουμε την εστία μας.
Σε ένα μίξερ ετοιμάζουμε το αυγολέμονο αφρατεύοντας καλά τα ασπράδια, κατόπιν προσθέτουμε αργά τους κρόκους έναν έναν + χωρίς να σταματήσουμε το μίξερ ρίχνουμε τον χυμό λεμονιού. Τέλος ρίχνουμε 2-3 μεγάλες κουτάλες ζουμί από την σούπα για να ανεβάσουμε ήπια την θερμοκρασία του + τελειώνουμε συμπληρώνοντας το μίγμα στην σούπα, μαζί με τον ψιλοκομμένο μάραθο + τον μαϊντανό ανακινώντας την καλά, να μοσχομυρίσουνε οι Αναστάσιμες ευχές !

This soup is used to break the fast after lent and makes a perfect appetizer or light meal. If you are adventurous, you can make it the traditional way with lamb innards. Otherwise, enjoy it with tender lamb meat like I do.
