How To make Marinated Shark Steaks
INGREDIENTS: 1 1/2 lb Shark steaks
2 tb Soy sauce
2 tb Rice or wine vinegar
-(balsamic is *delightful* -here!) 2 tb Lemon juice
2 tb Oil
2 tb Chopped parsley
1 Clove garlick, pressed or
-minced 1/2 ts Freshly-ground black pepper
minced green onions and parsley (TIP): Fish should be cooked only until it flakes easily. Check it often to prevent overcooking, which will not only make it rubbery, it will render it tasteless. A good way to check is to check it for opacity. When it has turned from translucent to white and opaque it's done. It will finish cooking on its own with residual heat if removed from the heat source. Fish is a high protein but low-calorie main dish. By using a light marinade you eliminate rich butter sauces and still maintain the delicate flavor. Cut the shark steaks into service-sized pieces. Place them in a glass dish. Combine the soy sauce, vinegar, lemon juice, oil parsley, garlick and black pepper. Pour the marinade over the fish and marinate for half an hour, turning at least once. Remove the fish (reserving the marinade) and broil 4 to 5 inches from the heat - about four minutes a side. Brush with the marinade before turning. Serve with minced green onions and parsley. Accompaniments: Rice and vegetable pilaf, leaf lettuce tossed with parsley-lemon dressing, and French or Italian sourdough bread.

I experimented with how to cook shark and came up with three recipes. These are the best ways I discovered out of about seven different methods I tried.

During the process of trying out different ways to cook shark I eliminated pan searing in oil or butter. Although both methods tasted okay, neither were really exceptional. I didn't try frying the fillets because someone had already told me that it tastes really good fried. I mean, almost any fish would taste good fried.
Recipe 1-in the microwave:
-Slice shark into one quarter inch thick bites
-Put small slices of butter on each one
-Sprinkle with Cavender's Greek Seasoning
-Add on some lemon juice
-Cover with Parmesan cheese that has no preservatives in it
-Microwave on high for one to one and half minutes depending upon the desired texture
Shark recipe 2-Kabobs on the grill:
-Cut meat into one and a half inch cubes
-Marinate the shark in Dale's Sauce for three minutes
-Slide cubes onto skewers
-Cook over coals on the grill for about ten minutes total
Method 3-on the stove top:
-Cut shark into small pieces one inch by one inch or less
-Deep fry in oil until they are slightly browned all around
-Add meat to your favorite buffalo sauce creation
-Serve with blue cheese or ranch dressing

Although I've only had blacknose shark I'm confident that these methods would work with Hammerhead, Sharpnose, Bonnethead, Spinner or other species.

Citrus Marinaded Shark

Here is the recipe:
Ingredients
* Juice of three limes
* Juice of three lemons
* 1/2 cup coco lopez
* 2 ounces tequila
* 3 tablespoons chopped green onions
* 1/4 cup finely chopped cilantro
* 2 tablespoons finely chopped red pepper
* 2 tablespoons finely chopped yellow pepper
* 2 fresh jalapenos, finely chopped
* Salt and pepper
* 2 (8 ounce) shark steaks
* 2 tablespoons olive oil

* Directions
In a mixing bowl, whisk all the ingredients together except for the shark and olive oil. Season with salt and pepper. Place the fish in a glass casserole dish. Pour the marinate over the shark and refrigerate for 24 hours. Remove the fish from the marinate. Heat the olive oil in a saute pan. Sear the shark for 2-4 minutes on each side depending on thickness. Remove from the pan and slice. Mound the salad in the center of the plate. Arrange the shark around the salad. Saute marinade then pour marinade on top of shark.

Trav's Fryer Episode: Blackened Mako Shark
In this episode of Trav's Fryer, i present to you all how to prepare Mako Shark by using a simple and quick marinade rub with lemon pepper and soy sauce combined. The shark steak is marinated for about 10 minutes or until ready to go on the grill. Shark is especially good grilled or blackened for about 5 minutes on each side. You can use sea salt or whatever seasonings you prefer. Mashed potatos are a great accompany to this meat. The mashed potatos are for the base or bed for the shark meat. Boil the mash potatos for about 20 minutes prior to cooking the steak. Then i simply just topped it off with baked asparagus and added my choice of dipping sauce.
