Kevin Curry of @fitmencook shows us how to make one of his favorite keto-friendly dishes. Sear off chicken thighs and then stir up a creamy sun-dried tomato sauce, all in the same pan! Feel free to customize this recipe to your own liking by swapping out the chicken thighs for chicken breasts or shrimp and using light coconut milk instead of heavy cream.

A super delicious and easy family favorite meal which comes together in no time. While the chickens in the oven, I make the rice and salad by the time the chicken is done everything else is done too. For a healthier option, you can substitute the rice for mixed greens or lettuce.
——Chicken Ingredients——
1/4 cup olive oil
1/4 cup plain yogurt
5 cloves of garlic
1 lemon the juice
1/2 tablespoon salt
1/2 tablespoon paprika
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon oregano
1 teaspoon thyme
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
8 skinless boneless chicken thighs
:
——Rice Ingredients——
1/3 cup olive oil
3 cups basmati rice (wash and soak in warm water for 20 minutes)
1/2 tablespoon salt
1 tablespoon chicken bouillon
1/2 teaspoon cumin
1/2 teaspoon turmeric
4 cups of chicken broth
:
——Salad Ingredients——
1/4 cup extra virgin olive oil
1 tablespoon apple cider vinegar
1 lemon the juice
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon salt
2 medium size tomatoes
1 English cucumber
1 small red onion
1 can of chickpeas (drain and rinse)
Parsley (a hand full)
Feta cheese for garnish
:
1. Preheat your oven to 425°
2. The chicken- Make the marinade for the chicken by combining the olive oil, plain yogurt, garlic, lemon juice, salt and the herbs and spices together and mix will.
3. Add the chicken thighs in the marinade give it a good mix and you can put it in the oven right away or let it marinate for a half an hour.
4. Put the chicken in the oven at 425° for about 35 to 40 minutes. Once it comes out of the oven let the chicken rest for 5 minutes then dice or sliced the chicken.
5. The rice- wash and soak the rice in warm water for about 20 minutes
6. Put a pan on high heat, add olive oil wait for the oil to get hot. then drain the rice and add it in there. season the rice with salt, chicken bullion, cumin, turmeric.
7. Then to the rice, add the chicken broth give it a good mix cover and wait for the liquid to reduce down, once the liquid reduces down, lower the heat to really low and let it cook for another 15 to 20 minutes.
8. For the salad- make the vinaigrette by combining together the Extra virgin olive oil, apple cider vinegar, lemon juice, garlic powder, oregano, salt and give it a good mix. To the vinaigrette add the tomatoes, cucumbers, red onion, chickpeas and parsley and toss everything together really well.
9. Once everything is done make your bowl rice first then the chicken and salad top it with some feta cheese and parsley and enjoy.
10. If you’re looking for a healthier option, you can substitute the rice for mixed greens or lettuce.

Mediterranean chicken thighs | Braised and roasted with olives and red wine
An explosion of the healthy Mediterranean flavours! Mediterranean chicken thighs, cooked using chicken thighs on the bone. It's the cooking with the bone that keeps the thigh juicy and flavourful making it the tastiest part of the chicken. Similar to a Fricassée, it's first sautéed in olive oil and then gently braised in the oven in its own juices until cooked moist and tender. Always a hit with any chicken lovers.

Ingredients
For the seasoning
• 1/2 tsp thyme
• 1 tsp oregano
• 1 tsp ground black pepper
• 1 tsp ground cumin
• 1 tsp garlic powder
• 1 tsp Salt
• 1/2 tsp paprika
• 1/2 tsp turmeric powder
To marinate the chicken
• 2 chicken breast, sliced (gives you 4 pieces)
• 2 tsp lemon juice
• 2 tsp oil
• 4 tsp of the seasoning
To make chicken and rice
• 2 tsp oil
• 1 onion, finely chopped
• 1 tsp garlic, finely chopped
• 1 cup rice (rinsed and soaked in water for 30 minutes)
• 2 and 1/4 cups of chicken broth
• 1 bay leaf
• 1-inch cinnamon
• 1 tsp lemon juice
• 1/2 cup frozen peas
Step-by-step recipe
Preparations for making chicken rice
1. Prepare the seasoning by combining the ingredients mentioned in the seasoning. Keep it aside.
2. Marinate the chicken with 2-3 tsp of the seasoning, lemon juice, and oil. Keep it aside for 30 minutes.
Making Mediterranean chicken rice
1. Heat 2 tsp oil over medium heat.
2. Place the marinated chicken in the heated pan. Fry it for 2-3 minutes on each side. The chicken need not be fully cooked. Remove it to a plate.
3. Add onion and saute until translucent.
4. Add garlic. Cook for 30 seconds.
5. Add rice and 2 tsp of the seasoning. Saute it for a minute.
6. Add chicken broth, bay leaf, cinnamon, and lemon juice. Gently scrape the tiny bits sticking to the bottom of the pan.
7. Let the broth come to a boil.
8. Add peas.
9. Place the chicken back into the pan. Reduce the heat to low. Cook for 15-20 minutes or until the water is absorbed by the rice.
10. Once cooked, keep it covered for 10 minutes. Fluff the rice with a fork. Garnish with coriander leaves.
11. Mediterranean Chicken and Rice is ready to serve. Serve with salad on the side.
