Taco Lasagna -- Easy Mexican Casserole Full of beef, beans, tomatoes and flour tortillas.
Taco Lasagna -- Easy Mexican Casserole Full of beef, beans, tomatoes and flour tortillas.
Taco Lasagna
Ingredients:
• 2 lbs. ground beef
• 1 poblano pepper (seeded and diced)
• 1/2 cup chopped onion
• 1 cup water
• 2 envelopes of taco seasoning
• 1 can black beans rinsed and drained
• 1 28oz can diced tomatoes undrained Rotel or Mexican
• 9 flour tortillas (8 inches)
• 1 can refried beans
• 4 cups shredded Mexican cheese blend
Instructions:
1. Preheat the oven to 350 degrees
2. Spray a 9×13 baking pan with cooking spray.
3. In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink. Drain off any fat.
4. Add water and taco seasoning packets. Bring to a boil. Reduce heat and then simmer, uncovered, for 2 minutes.
5. Stir in black beans and tomatoes (with juice). Simmer, uncovered, for 10 minutes.
6. Place 2 tortillas in the bottom of a greased 13×9-in. baking dish. Break a third tortilla and piece it together in any holes to make as much of a complete layer of tortillas as possible.
7. Spread with half of the refried beans and half of the beef mixture.
8. Sprinkle with 1 cup cheese.
9. Repeat layers (3 tortillas, remaining beans, remaining beef, 1 cup of cheese).
10. Top with remaining tortillas and 2 cups cheese.
11. Cover with sprayed foil and bake at 350° for 25-30 minutes or until heated through and cheese is melted.
12. Serve with sour cream and fresh pico de gallo.

A new way to serve up tacos…layered taco lasagna. This easy Mexican casserole is full of beef, beans, tomatoes and flour tortillas.
I have one child (he’ll remain nameless ???? ) who strongly dislikes homemade lasagna. In fact, he doesn’t care for any Italian casseroles. Some days I’m not sure how he’s my son.
It’s not lasagna in general, because he devours this taco lasagna with flour tortillas. Mexican dinners generally bring smiles around the table, and this cheesy taco lasagna recipe with Rotel tomatoes is no different!
You can bring smiles to your family by making this casserole. Dinner is served in about an hour!

Hi, welcome to my channel Perfect Recipes!
INGREDIENTS:
2 teaspoons olive oil
1 pound ground beef I use 90% lean
1/2 cup onion finely diced
1 teaspoon minced garlic
1 packet taco seasoning
4 ounce can diced green chiles drained
14 ounce can diced tomatoes drained
1/2 cup corn kernels fresh, thawed from frozen, or canned
16 ounce can refried beans
10 ounce can red enchilada sauce divided use
12 flour tortillas 8 inch size
3 cups shredded cheddar cheese divided use
2 tablespoons chopped cilantro
cooking spray
toppings such as pico de gallo, sour cream and guacamole optional
INSTRUCTIONS:
Preheat the oven to 375 degrees F. Coat a 9x13 baking dish with cooking spray.
Heat the olive oil in a large pan over medium high heat. Add the beef and cook, breaking up the meat with a spatula, for 4-5 minutes.
Add the onion and cook for 3-4 minutes or until softened. Add the garlic and cook for 30 seconds.
Stir in the taco seasoning until the meat and onions are thoroughly coated.
Add the green chiles, diced tomatoes and corn to the pan, then stir to mix everything together.
Add the can of refried beans. Stir until the mixture is thoroughly combined.
Spread a thin layer of enchilada sauce over the bottom of the baking dish.
Cut the tortillas in half, and layer 6 tortilla halved to fit in the dish. Spread 1/3 of the enchilada sauce over the tortillas, then sprinkle with 1/2 cup of cheese. Spread 1/3 of the bean and meat mixture over the cheese.
Repeat the layers, ending with layers of tortillas, enchilada sauce, and the remaining cheese.
Cover and bake for 20 minutes, then uncover and bake for an additional 20 minutes or until cheese is melted and browned.
Sprinkle with cilantro. Add any desired toppings, then cut into squares and serve.
