Tonight we are making a very easy
Casserole! Perfect for a busy Monday. Hope you will join us.
Recipe:
4 cups cooked chicken (can use canned chicken)
1 packet taco seasoning mix
1 can cream of chicken soup
1 1/4 cup sour cream
1 can black beans(drained and rinsed)
1 Can sweet corn, drained
I can Rotel diced tomatoes and green chilis, drained
1 cup shredded cheese
3/4 cup tortilla strips
Preheat oven to 350 degrees. Lightly spray 9x13 baking dish with cooking spray.
Combine chicken, taco seasoning, cream of chicken soup, sour cream, black beans, rotel tomatoes, corn and cheese. Stir together.
Spread mixture into baking dish. Top with tortilla strips. Bake for 30 minutes or until casserole is bubbly.
We loved this casserole. So easy and so good. I think serving it with some warm tortillas might be nice too. I hope you enjoy.

Mexican Chicken Tray Bake Recipe - A Simple One-Pot Family Meal
For midweek meals there is nothing more handy than an easy recipe that is just simple. Something that will avoid many hours of preparation and a whole load of washing up afterwards.
For that, we think that traybakes or one-pot meals are the perfect answer to feed your family, as they have all the flavour without all of the hassle. Besides, what’s not to love about an easy chicken traybake with a bit of Chipotle Paste and Chipotle Honey mixed in with delicious chicken juices and vegetables?
Now there are two ways to make this recipe :
The first one is more practical and straightforward. You would use skinless chicken and put all of the ingredients into a baking dish with the chipotle spicy mixture on top. You would then bake it in the oven at 200°C for 35-40 minutes approx, until your chicken is cooked through.
The second option is for those of you who love crispy chicken skin! For this we recommend you sear your chicken pieces in very hot olive oil to achieve that lovely and delicious crispy skin, before adding the chicken into your baking dish with the beans, vegetables and spicy mixture. It then goes in the oven for a further 30 minutes.
We hope this recipe comes in handy, and feel free to double up the recipe to feed a bigger family.
Ingredients
3 garlic cloves
1 tsp Chipotle Paste
2 tbsp Chipotle Honey
1 lemon (juice)
1 tsp black peppercorns
1 tsp salt
3 tbsp extra virgin olive oil
Handful of fresh coriander
2 chicken thighs (with skin and bone in)
2 chicken drumsticks (with skin)
Sea salt and coarse freshly ground black pepper
3 tbsp rapeseed oil
1 can of butter beans
2 red onions
3 carrots
300 grams of cherry tomatoes
½ cup of chicken stock
How To Make
Prepare the spicy mixture by adding the garlic cloves, Chipotle Paste, Chipotle Honey, lemon juice, coriander, extra virgin olive oil, black peppercorns and salt into a food processor. Blitz everything into a smooth mixture and reserve.
Heat up the oil in a frying pan. Season your chicken pieces with a good pinch of salt and freshly ground black pepper. Once your oil is very hot add your chicken pieces with the skin facing down. You want to sear both sides and achieve crispy golden skin but not cook it through. Set aside once it’s ready.
In the meantime slice the red onions and carrots into bite-sized pieces. Drain your butter beans and wash your cherry tomatoes.
In a large baking dish place the butter beans, red onion, carrots and cherry tomatoes, then pour the spicy mixture on top and mix everything together with a spoon.
Spread the bean-vegetable mixture on the baking dish and place in your pieces of seared chicken. Tuck them into the vegetables to avoid them from drying up whilst cooking in the oven. Add a pinch of salt and freshly ground black pepper, as well as another drizzle of olive oil and the stock.
Place your baking dish in the oven for 30-35 minutes approximately, (depending on your oven) until your veggies are cooked through.
Serve your chicken hot with a squeeze of lemon juice on top and a drizzle of extra virgin olive oil. Enjoy!

Serves 4
Prep 15 mins (+ 30 mins marinating time)
Cooking 35 mins
1 bunch coriander
2 garlic cloves
40g pkt Coles Mexican Seasoning Mix
2 tbs olive oil
8 chicken drumsticks
½ red onion, finely chopped
2 cups (400g) long-grain white rice
2 x 400g cans Coles Italian Diced Mexican Spiced Tomatoes
Sour cream, to serve
Salsa
1 tbs olive oil
125g can corn kernels, rinsed, drained
1 tomato, seeded, finely chopped
½ red onion, finely chopped
400g can red kidney beans, rinsed, drained
1. Reserve the coriander leaves. Place the garlic, coriander roots and stems, half the Mexican seasoning, half the oil and a pinch of salt in a food processor. Process until smooth.
2. Place the chicken in a large bowl. Pour the garlic mixture over the chicken and turn to coat. Cover with plastic wrap and place in the fridge for 30 mins to develop the flavours.
3. Meanwhile, to make the salsa, heat the oil in a frying pan over high heat. Cook the corn for 2-3 mins or until lightly charred. Transfer to a bowl with the tomato, onion and kidney beans. Toss to combine.
4. Preheat oven to 180°C. Heat the remaining oil in a large ovenproof frying pan. Cook the onion for 2 mins or until onion begins to soften. Add the remaining Mexican seasoning and the rice. Stir until well combined. Add the tomato and ½ cup (125ml) water and stir to combine. Season. Cook for 5 mins or until the mixture thickens slightly.
5. Arrange chicken over the rice mixture in the pan. Bake for 25 mins or until the chicken is cooked through.
6. Sprinkle salsa over the chicken mixture in the pan. Top with sour cream and coriander leaves to serve.
