How To make Mexican Rice Tart
CRUST:
1 1/4 c Rice,long-grain
2 Egg whites
2 tb Olives,black,ripe,sliced
2 tb Green onion,sliced
FILLING:
1/3 c Monterey Jack,shredded
1 c Chicken breast,shredded
2 tb Green chilies,chopped
2 tb Green onion,sliced
2 tb Black olives,sliced,ripe
OPTIONAL TOPPINGS:
Dairy sour cream Green chilies,chopped Black olives,sliced Picante sauce 1. Prepare Crust: Cook rice following package directions, salt optional.
Drain to remove any excess liquid. Cool slightly, Lightly beat egg whites in small bowl; stir in olives and green onion. Stir egg-white mixture into rice. Coat inside of 10" tart pan with removable bottom with nonstick vegetable-oil cooking spray. Spoon the rice into the pan to cover the bottom evenly and make a high rim. 2. Prepare the Filling: Scatter half the cheese over the crust. Combine the
chicken, chilies, green onion, olives and picante sauce in a medium-size bowl. Spread in the crust. 3. Bake in preheated moderate oven (350'F) for 20 minutes. Scatter the
remaining cheese over top. Bake for another 10-15 minutes or until the cheese is melted. Let stand for 10 minutes. Remove the pan sides; place the tart on a serving plate. Garnish with dairy sour cream, chopped green chilies and black olives, if you wish, and serve with additional picante sauce. (Shirley DeSantis, East Windsor NJ)

Ingredients:
Rice pudding
500 milliliters / 2 cups whole milk
100 grams / ½ cup superfine/caster sugar
150 grams / ¾ cup arborio rice
2 teaspoons vanilla extract
Tart
150 milliliters / ⅔ cup whole milk
2 eggs, room temperature
22 grams / 2 tablespoons custard powder, sifted
25 grams / ¼ cup confectioner’s/icing sugar, sifted
300 grams / 10.5 ounces puff pastry
Instructions:
Rice pudding
- Place the milk, sugar and rice into a saucepan on low-medium heat and bring to a simmer.
- Stirring intermittently every few minutes to ensure the rice cooks evenly and the milk has reduced and the rice is cooked, approximately 15-20 minutes.
- Remove from the heat and stir in the vanilla extract.
- Set aside to cool until it’s only warm.
Tart
- Preheat your oven to 180C/350F.
- Meanwhile, press the puff pastry into your pie dish and trim the excess.
- Place the rice pudding, milks, eggs, custard powder and sugar into a bowl and mix until well combined.
- Pour into the pastry and jiggle to ensure it is evenly spread out.
- Place into the oven to bake for 40 minutes or until golden and set in the center when you jiggle it.
- Remove and allow time to cool completely.
- Slice and serve.
- Dig in!

Rice Pudding Pie Recipe

Ingredients:
• 300g Rice
• 1.5l Fat Milk
• 160g Butter
• 6 Eggs
• 400g Caster Sugar
• 1 tbsp Orange and Lemon Zest
• Breadcrumbs
Step 1
In a pan add the fat milk and rice on low heat. You need to stir continuously until the rice is done and becomes creamy. It should take around 30 minutes or more. Once is done remove from heat and let it rest until cools down.
Step 2
In a separate pan melt 160 g butter at low heat. Remove it from heat and also let it rest until cools down.
Step 3
Take 2 bowls and separate 6 eggs and add the yolks in one and the egg whites in the other one. Add the caster sugar over the yolks and start mixing them for 10 minutes until creamy and white.
Clean carefully the mixer and beat the egg whites until stiff. If the mixer is not clean enough you might not get them done correctly.
Step 4
Add the rice into the yolks mixture and continue stirring until well incorporated. For an extra flavor add the lemon and orange zest. Incorporate the melted butter and continue stirring after each ingredient added.
To thick a little bit the mixture add 4 tablespoons of bread crumbs two at a time.
Step 5
The last step is to incorporate the whites with our mixture but also in 2 steps. Every time stir well with moves from down to top. When is all done pour it in a prepared pan greased with butter and bread crumbs. Bake it for 60 minutes at 160 °C.
When it is done let it cool completely or overnight.

1) Tart Ingredients :
Plain Flour - 1 cup (150 grams)
Cold Butter cubes - 75 grams (1/3 cup)
Sugar - 1 & 1/2 Tsp
Salt - 1/2 Tsp (As per taste)
Lime juice - few drops
Cold Water - 3 Tbsp
2) Mexican Filler Ingredients :
Boiled Kidney Beans - 1/2 cup
Boiled Sweet Corn - 1/4 cup
Chopped Green Capsicums - 1/4 Cup
Chopped Red Capsicums - 1/4 Cup
Chopped Tomato - 1/4 Cup
Black olives - 2 Tbsp
Pickled Jalapeno - 1 Tbsp
Roasted Cumin Powder - 1/2 Tsp
Black pepper powder - 1/4 Tsp
Mixed Herbs - 1 Tsp
Red Chilli Flakes - 1/4 Tsp
Salt - 1/2 Tsp (as per taste)
Lime Juice - 1Tbsp
