How To make Mexican Style Creamed Corn
10 oz Pkg frozen whole kernel Corn
1/4 c Chopped sweet Red Pepper
1/4 c Cream Cheese (reduced cal.)
1 T Skim Milk
1/4 c Chopped Green Pepper
1/4 c Chopped Celery
1/4 c Diced green Chili Peppers
In a medium saucepan combine corn, green pepper, red pepper, celery, and 1/2 cup water. Cook about 5 minutes or till corn is tender. Drain.
Stir in cream cheese, chili peppers, milk, 1/4 teaspoon salt, and dash pepper. Heat through. ********************************************************* Per serving: 94 calories, 4 g protein, 17 g carbohydrates, 3 g fat, 0 mg cholesterol, 215 mg sodium, 144 mg potassium.

This was one of the best recipes we've ever made! You've got to try this cheesy Mexican street corn dip for your next backyard barbecue this summer!
RECIPE:
1 block of Cream Cheese
2 cans corn drained(I used the fire roasted blend)
16 oz Pepper Jack
A handful of chopped cilantro
1/2 cup sour cream
Tajin Seasoning (as much as your heart desires)
Combine everything in a pan and place in your smoker at 225° for 2 hours, or until everything is nice and melted, mix it regularly!
Once done, crumble some Cotija cheese over the top with more Tajin seasoning! Enjoy!
If you are feeding a crowd, double this recipe!

CREAMY CORN with Jalapeno Recipe
Follow this recipe for a CREAMY CORN with jalapeno that tastes great and is a great side dish.
Ingredients:
1/2 yellow onion
1 jalapeno pepper
2 garlic cloves
2 cups of frozen or fresh corn
3 tablespoons of butter divided
1/2 cup of heavy cream
1 cup of milk
2 tablespoons of flour
salt and pepper to taste
1 teaspoon of sugar
1/4 cup of grated Parmesan cheese.

• 1 red and 1 green bell pepper
• 1/4 Red Onion (diced)
• 1 bush cilantro
• 4 tbsp butter
• 1 - 2 tbsp olive oil
• salt & pepper to taste
• 1 tsp cumin
• 1/2 tsp oregano
• 1 tsp minced garlic
• 1/2 cup Cotija cheese
• 1/2 lime squeezed
• 3 tbsp mayonaise
• Margarine
• 1/2 cup Cotija cheese
• Mexican Crema (table cream)
• Fancy Light Chili powder or Tajin
• top with 1/2 lime (squeezed) before serving

Corn on the cob
4 tbsps melted butter
1/4 cup mayo
1/4 cup sour cream
1 package Cotija cheese
tajin or chili powder
1/4 cup cilantro
2 limes
All-Purpose Seasoning
1 tsp garlic
1 tsp white sugar
Directions:
Preheat oven or Grill to 400 degrees. Clean corn and brush with oil or melted butter. Season with salt, pepper, garlic, onion powder. Grill or bake for 10-15 minutes or until tender. If using the oven, place corn under the broiler for a few minutes to get some char.
Mix together the mayo, sour cream, lime juice, sugar, garlic, and season to taste. In a separate bowl, break apart the Cotija cheese and add some lime zest. Brush mayo mixture onto the corn and then spoon on the cheese. Top with Tajin or Chili powder and serve.
Mexican Street Corn
The combination of mayonnaise, cotija and lime juice works wonders on corn.
