How To make Mexican Style Manicotti
6 manicotti shells
1/2 pound lean ground beed
3/4 cup refried beans
1/2 cup finely chopped celery
1/2 teaspoon ground cumin
1 12 oz can whole kernel corn with sweet peppers
drained
1 8 oz bottle picante sauce
1/2 cup dairy sour cream
1/4 cup green onions :
sliced
1/4 cup chopped pitted ripe olives
1/4 cup chopped tomato
Cook manicotti shells according to package directions. Meanwhile, in a 1 1/2 quart casserole, crumble ground beef. Cook, covered, on 100% power (high) for 2 1/2 to 3 1/2 minutes or till no pink remains. Drain off fat. Stir in refried beans, celery, and cumin. Fill cooked manicotti shells with meat mixture. Arrange the stuffed shells in a 10x6x2 baking dish. Pour corn and picante over shells. Cover with vented clear plastic wrap. Cook the stuffed shells on high for 8 to 10 minutes or till mixture is heated through, giving the dish a half turn once. Spoon sour cream over casserole. Sprinkle with green onions, ripe olives, and chopped tomato.

Today on Cooking in pink boots I decided to share one of my families favorite dishes. It's a cross between manicotti and enchiladas...I made this recipe years ago for the kiddies and turned out the adults loved it just as much so I stuck with and named it Manichiladas this dish is delicious...

DELICIOUS HOMEMADE MEXICAN MANICOTTI | BEEF MANICOTTI | NO BOIL MANICOTTI
Ingredients:
6 Raw MANICOTTI Shells
1 lb ground beef
1/2 package taco Seasoning
1/2 small onion chopped
1/4 cup chopped Cilantro
1 small Jalapeno chopped
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 cup shredded cheddar cheese
refried beans (optional)
sour cream for dipping
3 string cheese cut in half length wise.
1 jar Salsa + 1 cup water
add some cilantro to salsa.
Mix all top ingredients well, add 1/2 of a string cheese to each shell then fill the rest of the shell with meat mixture.
Add some salsa mixture to a baking dish, add all the stuffed MANICOTTI, add some dabs of refried beans ( optional). Cover with the rest of the salsa. Cover with foil and bake at 350° for 1 hour. Add cheddar cheese and bake another 10 minutes uncovered till cheese is fully melted. Serve with sour cream.

Three Cheese Filled Manicotti - Lynn's Recipes
A great dish for dinner any day of the week. This manicotti doesn't have any meat, but just three different kinds of cheese and some seasonings in the filling. Super easy to make!
14 pieces (8 oz.) Manicotti shells, cooked, drained and cooled
4 cups (32 oz.) Ricotta cheese
2 cups (8 oz.) shredded Mozzarella cheese, divided
½ cup grated Parmesan cheese, divided
2 eggs
1 tablespoon chopped fresh parsley
½ teaspoon salt
½ teaspoon fresh ground fresh pepper
¼ teaspoon ground nutmeg
1-1/2 cups (14 oz.) spaghetti sauce
Cook pasta according to package directions. Meanwhile, heat oven to 350°. Spray a 13x9x2 inch baking pan with cooking spray. In a large bowl, stir together ricotta cheese, 1-1/2 cups mozzarella cheese, ¼ cup Parmesan cheese, eggs, parsley, salt and pepper. Spoon into cooled pasta. Arrange filled pasta in single layer in the casserole dish. Pour spaghetti sauce over the pasta. Sprinkle with the remaining ½ cup mozzarella cheese and ¼ cup Parmesan cheese. Bake 35 minutes or until hot and bubbly.
